Someone gifted me a 20 pound box of ginger. After giving away 16 pounds of it, I started looking for things to do. Mary’s ginger bug to the rescue! It’s day 5 now, not sure it’s fermented enough. But I’m excited to check out your videos of what to do with this!
2T microplaned ginger 1T sugar 2T CHLORINE free water Add & stir to quart jar with breathable cover. Repeat each day for 5 days. Start using, feeding as above 1/ week in frig. I didn't see a recipe link so this is for future reference.
Grapefruit spoons are a must have in my kitchen. One time when I couldn't find my micro-grater, (my late husband had taken it out on the patio to use and left it) I actually used the grapefruit spoon to scrape the ginger for a recipe in which slices or chunks weren't really an option. Not as quick but it worked!
Thanks for the video Mary.. I am a ginger bugger too :) I just cut my ginger into small pieces..for the starter... And after it has been in the starter for a while.. I strain it out.. I put it in the food dryer and it is so delicious.. your very own dried candied ginger. .. (you know.. can't throw out anything :) On a low setting it keeps the good bacteria in it.. so super good for you too. After I boil the ginger for the ginger beer.. I strain that out and dry that too.. Keeps you in a lifetime supply of ground ginger.. And for some reason-after all that.. The ginger is hotter then ever.. Go figure.. When i search for my ginger pieces to bring home.. I look for the nub starts on the ginger and then if I find some I will break them off and plant them.. a win/win.. :) IMO about the honey use someone asked about.. I agree with you... tho I LOVE my bees, and my raw honey... Honey can kill bacteria, that is some of it's amazing qualities, but not what you want in a fermented starter. (Store honey might be different-IDK) But they can give it a try and see what happens. Thanks Mary.. fun video again :)

@@MarysNest~ I don't grow a crop as much as I have big pots of them... and they have to come in the greenhouse in the fall.. very sensitive to cold temps. I am sure in Tx. you are able to keep it going year round, except for the snafu of the certain - at least one dip to low. They are very much the same as turmeric. But you have to know that your own-freshly dug, is better then anything else you can get. ;) Thanks again Mary :)
Green Rage - How true!! Our own home grown is better. It takes a good while to get ginger going, even here in Texas. I think I am going to try it in pots and then bring it inside when we have a cold snap. Thanks for the tip!!❤️😘❤️
Well, i have a ginger bug started several yrs. ago. I checked it today, still fizzy, i decided to feed it. Gave it 1 tb sucanat sugar. It fizzed up got a bit excited. I havent fed it for over a year, kept in a half gallon jar. Its about a half full of giner, rest is liquid. Not a bad flavor. Smells beerish. Im going experiment this week with some fruit or lemons. Great strong recipe. Take care.

I've made lacto fermented blueberry soda a couple times & would like to make that & other sodas using a ginger bug. So easy, tasty & actually good for us, unlike store bought sodas which wreak havoc on our bodies. Great advice about keeping different ferments separated. I have sourdough, kefir & fermented fruits/veggies going all the time & keep each in its own area to avoid contamination 😊

Hi Mary! Ty for wonderful details, I started a ginger bug a bit different recipe: 1 tabl ginger, 1 tabl sugar to 1.5 oz clean water, feed for 5 days. Then used a quart jar and a pickle pipe. Today is my last day to feed and I have no bubbles or yeasty smell, my kitchen is cool during winter months, do you think I might need a few more days out of fridge and daily feeding? Thank you so kindly for responding!!

I'm going to be sitting on pins and needles now for the next FIVE DAYS. I have ALWAYS wanted to learn how to make my own ginger ale!!! Here in MI, ginger ale is called: *Vernor's*, because the factory is located here. I have always used it for medicinal purposes, ie: Vernor's, lemon & honey, heated and stir all the fizz out equals hot tottie. There's always the option of adding a little whiskey in there for adults. ;) CAN'T WAIT!!! :-D Love & prayers

We are on a strict sugar-free diet. Does all of the sugar get eaten by the bacteria? I have seen Ginger beers with stevia in the supermarkets which we have purchased and are delicious. However, they are quite expensive. Is there a way to make this sugar free or is there no sugar leftover by the time it is fermented? Many thanks

Hello Mary. About a year ago, TH-cam suggested watching a video on making my own unfermented ginger ale. But I have recently discovered fermentation. I had no idea ginger ale could be fermented until TH-cam suggested your ale video. In another video, I think it was the strawberry soda video, you mention root beer as a possibility. Mind Blown. Next I plan to watch your beet kvass and Kiefer videos. I've subscribed. And hope to learn as much as I can..
So how did you get enough liquid after the 5 days to get 1/4C out then how did you re-feed? Im on day 3 and is bubbling but not much liquid, should I up the liquid?
@@judypeterson9952 yeah you can up the liquid. 1/4 cup is only 4 tablespoons. Also fermenting is dynamic. If you have a little more or less than a 1/4 cup it will still work. As long as there’s yeast and sugar it will ferment!
Lee and Daniel love to drink soda. I drink ginger ale sometimes if I am feeling nausea since I sometimes have motion sickness. I used medicine and Healing-Scents Motion Sickness/Nausea inhaler during my trip to visit my relatives since you can't bring drinks on planes. Looking forward to learning how to make them.
Love your videos. Trying again to make ginger bug. Pealing carefully and grating ginger. Plain white sugar and spring water daily. Coffee filter and elastic. Day six and No fizz!,, We are having a cool spring, should I put in oven with oven light on?
Thank you for the video. I just started my first bug yesterday. Added more ginger and sugar today. When i checked the bug today before adding more, the color of ginger looks darker.. i hope its ok. One more observation is that two tbsps of water only gets dissolved around the ginger and creates a paste. Is that how it should be? Other videos i see online use more water and the ginger just settles on the bottom.

Actually, if your area uses chloramine to purify water, an old brewer’s trick to eliminate it is to stir in vitamin c powder. Apparently 1/4 teaspoon will eliminate the chloramine from about 5 gallons of water.

Hi Denise, that’s a great question. I need to be a little unpredictable since it contains antibacterial agents that may work against the fermentation process. However, that said I have heard from others that in some cases they have had success. Use a pourable liquid honey and preferably one that has been pasteurized as opposed to being raw. You can store it in the fridge and feed it once per week or you can leave it on the counter and feed it daily. It will last indefinitely x like a sourdough starter - if you maintain it. Karen Tidwell - Hi Karen, Ginger by its nature is great at preventing mold. And also, since you will be adding fresh ginger, sugar, and water every day - and stirring it daily - that will help tremendously to prevent the mold. At that point you can refrigerate it and just feed it once a week which is what I like to do - as opposed to keeping it out on the counter and feeding it daily. Hope this helps! Love, Mary❤️😘❤️

this is amazing, thank you))) please tell, could I use some fruit to feed the bug (like lemon or such)? I am not using sugar and try to avoid it. I understand that fructose is sugar as well, but if I need to feed the bug with smth, I'd rather replace sugar with lemons, if it'll work....
That's a great question. You can try using lemons but not sure if they will provide enough food for the good bacteria. But it's certainly work experimenting with. Can you use molasses? You could try that and see if it would work. So glad you like this video. Love, Mary

Hi Jay, Thank you for the kind words. That’s a great question. Yes, you can also ferment fruit to use to make different types of soda but it isn’t as “perpetual” in nature as the ginger, since fruit ferments quickly turn to alcohol (think wine) and then vinegar. Hope this helps. 🤗

Question: I have read elsewhere that it is beneficial to leave the skin on the ginger when making the ginger bug, for more yeast activity to help make the beneficial bacteria/probiotics. The skin always contains lots of natural yeasts and bacteria. That is why I like to use organic ginger. However, that said, if you can't find organic ginger, you can decide whether or not to peel it. Maybe what the ginger has been exposed to in the soil isn't too bad - and given that it is a small amount compared to the water and sugar - it might be OK. What do you think? @@MarysNest watched your bone broth video yesterday and I'm hooked for life. Liked, subscribed and notified. My ginger has been in the ground 7 months or so now. We did a test harvest on the weekend they have been drying all week. Used some in my ginger garlic paste yesterday and the flavor was nice and strong. We will harvest week after next when classes are on break. I actually live on the Caribbean island of Antigua and cooking foods from all over the world. I look forward to all of the things I will learn from you.

Hi Mary, I am definitely going to try this this Summer. You mention putting sugar in this, I just wonder, would it be advisable to use sugar with a sourdough? Just a thought. And also on the chlorine, I think maybe setting chlorinated water out for a hour might be enough to eliminate the chlorine. You might check on that but IDK that sitting out all night is required to evaporate chlorine. Have fun!
Hi Bill, Thanks for the tip about the water! Great info!! You raise and interesting question about sourdough. Yes, you can add sugar if things seem very slow to get going however, you need to be careful so as to not give the good bacteria too much to eat and not the yeast. The bacteria gobbles up the sugar quickly and when it releases that CO2, the starter can begin to take on that vinegary smell as opposed to a yeasty smell but you can combat this by feeding your starter - along with a bit of sugar - and then putting it in the fridge. The cold slows down the bacteria. Yes, it slows down the yeast too but yeast does better in the cold than the bacteria so the bacteria doesn't get out of control. Hope this helps. Love, Mary

I don’t think it’s supposed to be slimy. I would dump that batch and try again using organic sugar and don’t peel the ginger as the skin is important in the fermentation process.

I am making some of your fermented sauerkraut. Could I have put a coffee filter with the elastic(instead of a clean towel) on the top of each quart jar of the sauerkraut like you are doing here with the ginger bug?
Hi Linda, Thanks for visiting. No, that won't work. A ginger bug is an aerobic fermentation - it needs air. And sauerkraut is an anaerobic fermentation - no air. Mary's Nest Hi Mary! I never eat out and it’s just me and my old man. He’ll be 14 next month and has 4 legs and his name is Andy. Lol. He’s blind but gets around really well even at night. He’s a wire haired dachshund. 90% of my diet is fresh produce the other 10 is dairy. I’m 53 and just found out that I’m going to be a grandma for the first time. I always cooked healthy meals for my children. I’ve learned so much from you, Heidi and Stacy. So I am looking forward to learning more skills from your videos. I’ve never made bread or bone broth. I’m growing potatoes garlic and ginger in cardboard boxes in my backyard and have bought containers to grow some tomatoes peppers onions beets radishes and herbs this year. Mary, I bought a high price microplane to grate ginger. It is so frustrating to use. The ginger gets caught in the gates and then I have trouble scraping it out. Please do a video on microplaning herbs. Help!
Hi Mary! I love your videos, you always make me smile when you say "hello, sweet friends!"! It never fails! Anyway, I'm making this Ginger Bug and have followed the directions to a 'T'. There is some mild activity but nothing like I'd expect to see and it still smells very much like ginger. It's April in Toronto, Canada and I'm wondering if I could set this on a heating pad or somehow provide it with some heat to help it get going... Any thoughts? Also, I made the sauerkraut... Delicious! 😋
I just started with ground ginger. I hope 1 teaspoon is ok I'm a little low for a tablespoon right now. I also bought a rhizome at the market. I'm waiting for roots and stems to come out, it's in water. I'll have all kinds of ginger. :) I'm getting white "flecks" on the water. And the ginger is dark. I might use 1 teaspoon of water. Later anyway. There's some extra water in there.
Hum this ground ginger isn't working out too well. I might even have to try chopping up a piece of ginger from the store. I would really enjoy this working. Something must be wrong. I started with 1/4 cup distilled water and 2 teaspoons of white sugar and ground ginger. And fed it every day 1 teaspoon of sugar and ginger. maybe I should wait more than everyday.
I tried this three times and could never get it to ferment.I concluded that my air-conditioned house was too cool to allow it to ferment. Now I have three jars of sugary Ginger water in my refrigerator and I'm not sure what to do with them.
I left just a few bits of my last ginger bug and it reactivated 5 hours after I did a double ginger/sugar/water recipe. Super fizzy. I wonder if it was ready to go or not. I let it go overnight, but man it was fizzy!
Hi Rick, great questions. A ginger bug is a fermented product rich in gut loving good bacteria. Ginger juice is simply that - juice - one that is rich in anti-inflammatory compounds and great to assist with digestion. If you want to make a fermented soda, you need some sort of "bug" to help get the process started. So although both a ginger bug and ginger juice are great for you, they have a different role in the kitchen. Hope this helps. Love, Mary

Hi Carol, That is an excellent question. I have never tried it. The yeast and bacteria really like white sugar and they gobble it all up. When you go to taste your "bug" after it has fully fermented, it will not be sweet. However, that said, you can certainly give coconut sugar a try and see what happens. I have heard from others that sometimes the better sugars don't work. I'm not sure why. Maybe all the minerals have some effect on the yeast and bacteria - not sure. But give it a try and let me know how it turns out. Please forgive me - I lose track of all the names of my viewers - especially when there is no photo...and so I forget what I shared with them. It's going to all be consumed by the yeast and bacteria. And you have to feed the bug every day. Coconut sugar can be expensive. So my answer would be try it if you want. And see how it works. So that is a "YES" for you. But I would not waste the coconut sugar. So for me personally, it's a "No". Hope this helps. Love, Mary

That's a great question. Putting it in the fridge will considerably slow down the fermentation so you might not see much fizz but that is OK. In many ways it's like a sourdough starter. You can put it in the fridge but remember to feed it once per week. When you are ready to use it, take it out the night before and feed it and leave it on the counter to come up to room temperature. Hi Julie, Welcome and hello to my sweet fellow Texan!! That is an interesting question. I know many people do not like the idea of using white sugar but it really does feed the yeast and bacteria very well. And they eat it all up so there really is very little sugar left in the end product. As to honey - you can try it but I have found that it does not work well for me. The reason is that honey is an anti-bacterial and can inhibit the growth of the good bacteria. But the honey I was using was raw honey - so very rich in those anti-bacterial properties! Process honey that has been heated - like what is sold at the grocery stores - might work. BTW - Do you enjoy making these sorts of traditional foods? Yes, you will want it to be somewhat bubbly. And it does need some warmth. Try wrapping it in a dish towel and putting it on top of your refrigerator to keep it warm and cozy. Keep me posted. Someone gifted me a 20 pound box of ginger. After giving away 16 pounds of it, I started looking for things to do. Mary’s ginger bug to the rescue! It’s day 5 now, not sure it’s fermented enough. But I’m excited to check out your videos of what to do with this!

I use a lot of ginger in my daily juice (I have a Breville juicer, highly recommend!)

You can freeze ginger too, not sure if it will ferment after it's frozen but, cook with it, always have it on hand
2T microplaned ginger
1T sugar
2T CHLORINE free water
Add & stir to quart jar with breathable cover.
Repeat each day for 5 days.
Start using, feeding as above 1/ week in frig.

Grapefruit spoons are a must have in my kitchen. One time when I couldn't find my micro-grater, (my late husband had taken it out on the patio to use and left it) I actually used the grapefruit spoon to scrape the ginger for a recipe in which slices or chunks weren't really an option. Not as quick but it worked!
Thanks for the video Mary.. I am a ginger bugger too :) I just cut my ginger into small pieces..for the starter... And after it has been in the starter for a while.. I strain it out.. I put it in the food dryer and it is so delicious.. your very own dried candied ginger. ..

On a low setting it keeps the good bacteria in it.. so super good for you too.
After I boil the ginger for the ginger beer.. I strain that out and dry that too.. Keeps you in a lifetime supply of ground ginger.. And for some reason-after all that.. The ginger is hotter then ever.. Go figure.. When i search for my ginger pieces to bring home.. I look for the nub starts on the ginger and then if I find some I will break them off and plant them.. a win/win.. :)
IMO about the honey use someone asked about.. I agree with you... tho I LOVE my bees, and my raw honey... Honey can kill bacteria, that is some of it's amazing qualities, but not what you want in a fermented starter. (Store honey might be different-IDK) But they can give it a try and see what happens.

@@MarysNest~ I don't grow a crop as much as I have big pots of them... and they have to come in the greenhouse in the fall.. very sensitive to cold temps. I am sure in Tx. you are able to keep it going year round, except for the snafu of the certain - at least one dip to low. They are very much the same as turmeric. But you have to know that your own-freshly dug, is better then anything else you can get. ;) Thanks again Mary :)
Green Rage - How true!! Our own home grown is better. It takes a good while to get ginger going, even here in Texas. I think I am going to try it in pots and then bring it inside when we have a cold snap. Thanks for the tip!!❤️😘❤️

Well, i have a ginger bug started several yrs. ago. I checked it today, still fizzy, i decided to feed it. Gave it 1 tb sucanat sugar. It fizzed up got a bit excited. I havent fed it for over a year, kept in a half gallon jar. Its about a half full of giner, rest is liquid. Not a bad flavor. Smells beerish. Im going experiment this week with some fruit or lemons. Great strong recipe. Take care.

I've made lacto fermented blueberry soda a couple times & would like to make that & other sodas using a ginger bug. So easy, tasty & actually good for us, unlike store bought sodas which wreak havoc on our bodies. Great advice about keeping different ferments separated. I have sourdough, kefir & fermented fruits/veggies going all the time & keep each in its own area to avoid contamination 😊

Hi Mary! Ty for wonderful details, I started a ginger bug a bit different recipe: 1 tabl ginger, 1 tabl sugar to 1.5 oz clean water, feed for 5 days. Then used a quart jar and a pickle pipe. Today is my last day to feed and I have no bubbles or yeasty smell, my kitchen is cool during winter months, do you think I might need a few more days out of fridge and daily feeding? I'm going to be sitting on pins and needles now for the next FIVE DAYS. I have ALWAYS wanted to learn how to make my own ginger ale!!! Here in MI, ginger ale is called: *Vernor's*, because the factory is located here. I have always used it for medicinal purposes, ie: Vernor's, lemon & honey, heated and stir all the fizz out equals hot tottie. There's always the option of adding a little whiskey in there for adults. ;) CAN'T WAIT!!! :-D

We are on a strict sugar-free diet. Does all of the sugar get eaten by the bacteria? I have seen Ginger beers with stevia in the supermarkets which we have purchased and are delicious. I made my ginger bug today! It’s hot this week and a cold ginger soda sounds so good!
So how did you get enough liquid after the 5 days to get 1/4C out then how did you re-feed? Im on day 3 and is bubbling but not much liquid, should I up the liquid?
@@judypeterson9952 yeah you can up the liquid. 1/4 cup is only 4 tablespoons. Also fermenting is dynamic. If you have a little more or less than a 1/4 cup it will still work. As long as there’s yeast and sugar it will ferment!

Lee and Daniel love to drink soda. I drink ginger ale sometimes if I am feeling nausea since I sometimes have motion sickness. I used medicine and Healing-Scents Motion Sickness/Nausea inhaler during my trip to visit my relatives since you can't bring drinks on planes. Looking forward to learning how to make them.

When i checked the bug today before adding more, the color of ginger looks darker.. i hope its ok.
One more observation is that two tbsps of water only gets dissolved around the ginger and creates a paste. Is that how it should be?
Other videos i see online use more water and the ginger just settles on the bottom.
2 quick questions: how do I know when it's safe to refrigerate my bug, and does it remain covered by the coffee filter or do I use the lid?

Actually, if your area uses chloramine to purify water, an old brewer’s trick to eliminate it is to stir in vitamin c powder. Apparently 1/4 teaspoon will eliminate the chloramine from about 5 gallons of water.

Hi Denise, that’s a great question. I need to be a little unpredictable since it contains antibacterial agents that may work against the fermentation process. However, that said I have heard from others that in some cases they have had success. Use a pourable liquid honey and preferably one that has been pasteurized as opposed to being raw. You can store it in the fridge and feed it once per week or you can leave it on the counter and feed it daily. It will last indefinitely x like a sourdough starter - if you maintain it. Karen Tidwell - Hi Karen, Ginger by its nature is great at preventing mold. And also, since you will be adding fresh ginger, sugar, and water every day - and stirring it daily - that will help tremendously to prevent the mold. At that point you can refrigerate it and just feed it once a week which is what I like to do - as opposed to keeping it out on the counter and feeding it daily. Hope this helps! Love, Mary❤️😘❤️

As far as I understand you store it in the refrigerator similar to a sourdough starter and feed it every week to keep it alive and take as much you need for one soda.

I understand that fructose is sugar as well, but if I need to feed the bug with smth, I'd rather replace sugar with lemons, if it'll work....
That's a great question. You can try using lemons but not sure if they will provide enough food for the good bacteria. But it's certainly work experimenting with. Can you use molasses? You could try that and see if it would work. So glad you like this video. Love, Mary

Good tip on the no crossing bacteria when fermenting two or more things. Mary, I have been terrified to start these types of things. I LOVE ginger ale and such and ginger in tea...this will be the first ferment I try when I move! (Which I hope will be soon!) ❤️

Hi Jay, Thank you for the kind words. That’s a great question. Yes, you can also ferment fruit to use to make different types of soda but it isn’t as “perpetual” in nature as the ginger, since fruit ferments quickly turn to alcohol (think wine) and then vinegar. Hope this helps. 🤗

Thank you SO much for visiting. I am so glad you are enjoying my videos - and thank you SO much for the kind words!! Yes, that is true about the skin. The skin always contains lots of natural yeasts and bacteria. That is why I like to use organic ginger. However, that said, if you can't find organic ginger, you can decide whether or not to peel it. Maybe what the ginger has been exposed to in the soil isn't too bad - and given that it is a small amount compared to the water and sugar - it might be OK. What do you think? @@MarysNest watched your bone broth video yesterday and I'm hooked for life. Liked, subscribed and notified. My ginger has been in the ground 7 months or so now. We did a test harvest on the weekend they have been drying all week. Used some in my ginger garlic paste yesterday and the flavor was nice and strong. We will harvest week after next when classes are on break.

Hi Mary, I am definitely going to try this this Summer. You mention putting sugar in this, I just wonder, would it be advisable to use sugar with a sourdough? Just a thought. And also on the chlorine, I think maybe setting chlorinated water out for a hour might be enough to eliminate the chlorine. You might check on that but IDK that sitting out all night is required to evaporate chlorine. Have fun!
Hi Bill, Thanks for the tip about the water! Great info!! You raise and interesting question about sourdough. Yes, you can add sugar if things seem very slow to get going however, you need to be careful so as to not give the good bacteria too much to eat and not the yeast. The bacteria gobbles up the sugar quickly and when it releases that CO2, the starter can begin to take on that vinegary smell as opposed to a yeasty smell but you can combat this by feeding your starter - along with a bit of sugar - and then putting it in the fridge. The cold slows down the bacteria. Yes, it slows down the yeast too but yeast does better in the cold than the bacteria so the bacteria doesn't get out of control. Hope this helps. Love, Mary

I don’t think it’s supposed to be slimy. I would dump that batch and try again using organic sugar and don’t peel the ginger as the skin is important in the fermentation process.

Yes, you can use raw cane sugar. If you do not have a source of filtered water, yes, boil it first, then let it cool. 🤗

Hi Linda, Thanks for visiting. No, that won't work. A ginger bug is an aerobic fermentation - it needs air. And sauerkraut is an anaerobic fermentation - no air. Mary's Nest Hi Mary! I never eat out and it’s just me and my old man. He’ll be 14 next month and has 4 legs and his name is Andy. Lol. He’s blind but gets around really well even at night. He’s a wire haired dachshund. 90% of my diet is fresh produce the other 10 is dairy. I’m 53 and just found out that I’m going to be a grandma for the first time. I always cooked healthy meals for my children. I’ve learned so much from you, Heidi and Stacy. So I am looking forward to learning more skills from your videos. I’ve never made bread or bone broth. I’m growing potatoes garlic and ginger in cardboard boxes in my backyard and have bought containers to grow some tomatoes peppers onions beets radishes and herbs this year. There is some mild activity but nothing like I'd expect to see and it still smells very much like ginger. It's April in Toronto, Canada and I'm wondering if I could set this on a heating pad or somehow provide it with some heat to help it get going... Any thoughts? Also, I made the sauerkraut... I just started with ground ginger. I hope 1 teaspoon is ok I'm a little low for a tablespoon right now. I also bought a rhizome at the market. I'm waiting for roots and stems to come out, it's in water. I'll have all kinds of ginger. :) I'm getting white "flecks" on the water. And the ginger is dark. I might use 1 teaspoon of water. Later anyway. There's some extra water in there.
Hum this ground ginger isn't working out too well. I might even have to try chopping up a piece of ginger from the store. I would really enjoy this working. Something must be wrong. I started with 1/4 cup distilled water and 2 teaspoons of white sugar and ground ginger. And fed it every day 1 teaspoon of sugar and ginger. maybe I should wait more than everyday.
I tried this three times and could never get it to ferment.I concluded that my air-conditioned house was too cool to allow it to ferment. Now I have three jars of sugary Ginger water in my refrigerator and I'm not sure what to do with them.

I left just a few bits of my last ginger bug and it reactivated 5 hours after I did a double ginger/sugar/water recipe. Super fizzy. I wonder if it was ready to go or not. I let it go overnight, but man it was fizzy!

Is a ginger bug different than juicing ginger in a juicer? What would be benefits or differences of each?
Hi Rick, great questions. A ginger bug is a fermented product rich in gut loving good bacteria. Ginger juice is simply that - juice - one that is rich in anti-inflammatory compounds and great to assist with digestion. If you want to make a fermented soda, you need some sort of "bug" to help get the process started. So although both a ginger bug and ginger juice are great for you, they have a different role in the kitchen. Hope this helps. Love, Mary
@@MarysNest thank you what I wanted to know. I subsequently learned a work aground. That is, juice and add sparking water and use a sweetener substitute for sugar. I'm trying to get away from sugar, far away and too carbs. I know a reason to purchase a carbonation water maker.

Hello Mary, would it be OK to use coconut sugar instead of the plain white sugar?
Hi Carol, That is an excellent question. I have never tried it. The yeast and bacteria really like white sugar and they gobble it all up. When you go to taste your "bug" after it has fully fermented, it will not be sweet. However, that said, you can certainly give coconut sugar a try and see what happens. I have heard from others that sometimes the better sugars don't work. I'm not sure why. Maybe all the minerals have some effect on the yeast and bacteria - not sure. But give it a try and let me know how it turns out. Please forgive me - I lose track of all the names of my viewers - especially when there is no photo...and so I forget what I shared with them. But I want to make sure that no one is left out. @@carolmccarthy201 - LOL!! Was my response too long! LOL!! As I said, I have never tried it. Is there a reason you don't want to use the white sugar? It's going to all be consumed by the yeast and bacteria. And you have to feed the bug every day. Coconut sugar can be expensive. So my answer would be try it if you want. And see how it works. So that is a "YES" for you. But I would not waste the coconut sugar. So for me personally, it's a "No". Hope this helps. Love, Mary

Will it still be fizzy if it's put in the fridge? Will the cold kill the fizz like with kefir?
That's a great question. Putting it in the fridge will considerably slow down the fermentation so you might not see much fizz but that is OK. In many ways it's like a sourdough starter. You can put it in the fridge but remember to feed it once per week. When you are ready to use it, take it out the night before and feed it and leave it on the counter to come up to room temperature. Hi Julie, Welcome and hello to my sweet fellow Texan!! That is an interesting question. I know many people do not like the idea of using white sugar but it really does feed the yeast and bacteria very well. And they eat it all up so there really is very little sugar left in the end product. As to honey - you can try it but I have found that it does not work well for me. The reason is that honey is an anti-bacterial and can inhibit the growth of the good bacteria. But the honey I was using was raw honey - so very rich in those anti-bacterial properties! Process honey that has been heated - like what is sold at the grocery stores - might work. BTW - Do you enjoy making these sorts of traditional foods? Yes, you will want it to be somewhat bubbly. And it does need some warmth. Try wrapping it in a dish towel and putting it on top of your refrigerator to keep it warm and cozy. Keep me posted.
