  • Today, we are making a spicy and flavorful Kolhapuri Anda Curry, a famous dish from the Kolhapur region of Maharashtra. Known for its bold spices and rich flavors, this dish brings the heat and aroma that’s sure to make your meal unforgettable. Let's dive right into this mouth-watering recipe!
    Ingredients:
    Grated Dried Coconut - 1 cup (for roasting)
    Sesame Seeds - 1/4th cup
    Poppy Seeds - 1 tsp
    Coriander Seeds - 1 tsp
    Cumin Seeds - 1 tsp
    Oil - 5 tsp (2 tsp for sautéing onions, 1 tsp for eggs, and 2 tsp for the gravy)
    Onions - 2 large (sliced for the gravy paste)
    Boiled Eggs - 4
    Red Chilli Powder - 1/4th tsp (for eggs) + 1/2 tsp (for gravy)
    Kolhapuri Chutney - 1 tsp
    Chopped Onion - 1 cup (for the gravy)
    Water - 1 cup
    Salt - as per taste
    Garam Masala - 1/2 tsp

    Step-by-Step Cooking:
    Roast the Ingredients:
    Take 1 cup of grated dried coconut and roast it on medium heat until it turns golden brown.
    In the same pan, add 1/4th cup sesame seeds, 1 tsp poppy seeds, 1 tsp coriander seeds, and 1 tsp cumin seeds, roasting them until they release their aroma and turn golden brown.
    Prepare the Gravy Paste:
    Take 2 large onions, slice them thinly, and sauté in 2 tsp oil until they become golden brown. In Hindi, we say "gal jane tak cook kare."
    Once the onions are done, combine them with the roasted coconut and seeds in a blender. Add a little water if necessary and blend into a smooth paste. This will be the base for our gravy.
    Sauté the Eggs:
    In a pan, add 1 tsp oil and lightly sauté 4 boiled eggs.
    Add 1/4th tsp red chilli powder to the eggs and sauté them for 2-3 minutes to infuse the flavor.
    Prepare the Gravy:
    In the same pan, add 2 tsp oil and 1 cup chopped onion, sautéing until soft and translucent.
    Add 1 tsp Kolhapuri chutney and 1/2 tsp red chilli powder, mixing and cooking until well-combined and aromatic.
    Once the masala is cooked well, add the gravy paste we prepared earlier and 1 cup of water.
    Mix everything together and let it cook until the oil floats on top, indicating that the gravy is cooked perfectly.
    Finish the Curry:
    Add salt as per taste and 1/2 tsp garam masala.
    Drop the sautéed boiled eggs into the gravy and cook the masala with the eggs for 2-3 more minutes.
    Serving:
    Once the curry is cooked, your spicy and delicious Kolhapuri Anda Curry is ready to serve. Pair it with hot steamed rice or soft rotis for a perfect meal!
