Malai Paneer
Soak 1/2 cup of cashew nuts in lukewarm water for about an hour. Then blend & make a smooth paste.
In a pan heat 2 tbsp of ghee, add 1 tsp jeera, 3-4 whole black peppercorns, 1 bay leaf, 2-3 Green cardamom pods, 2-3 cloves. Sauté & then add 2 finely chopped onions & 3-4 crushed cloves of garlic. Cook till golden. Now add 1 tsp of crushed ginger & green chillies. Now add the cashew paste along with some water & cook for a few minutes. Add salt, 1 tbsp coriander pd & Kasturi methi. Add 1 Tbsp of cream & stir well. Keep adding water as per the desired consistency. Add a pinch of sugar and finally add the paneer cubes. Cover & cook for about 10-15 mins and serve hot with a sprinkle of garam masala & Kasturi methi.
Akhe Masoor Ki Daal
Wash one cup of whole masoor daal thoroughly. In a pressure cooker, add the daal, 4 cups of water, salt to taste & 1 tsp turmeric pd, 1 tsp oil, 1 “ginger sliced finely.
Give at least 5-6 whistles. Allow to cool.
For the tadka, take a deep pan, heat 2 tsp ghee, then 1 tsp cumin seeds & green chillies. Then Add finely sliced garlic and some ginger. Sauté till fragrant, then add finely chopped onions. Let them brown well & then add the tomatoes. Add salt, red chilli pd & coriander pd. Cook till the oil is release from the sides & Pour the daal over the tadka. Add more water as desired and allow it to simmer for 10-15 mins. Remember this Dal will keep thickening as it cools. Serve hot garnished with freshly chopped coriander leaves.
Gobi, Matar & Gajar Ki Sabzi
In a pan, heat 2 tbsp oil & add 1 Tsp of cumin seeds. Allow them to crackle. Then add green chillies & roughly chopped onions. Once translucent, add roughly chopped tomatoes. In 5 mins successions, start with green peas, then diced carrots & finally diced cauliflower. Allow to cook till they soften. Add salt, coriander powder, turmeric, red chilli powder, mix, cover & cook on low flame till all the veggies are well done. Garnish with freshly chopped coriander leaves & serve hot.
