  • Tonight, we turned leftover sautéed green beans and chicken thighs into fajita tacos. In this series, I’ll share tips for crafting budget-friendly meals using what you have on hand, transforming leftovers into exciting new dishes to keep mealtime fresh and fun.
    Hi, I'm Kendra! I have lived most of my life in Texas. I enjoy cooking & preserving food by canning. I love canning so much I started a small canning business in 2011 devoted to jams & pickles. I volunteer as the social media manager for our family cemetery and the family's yearly reunion. I have also volunteered for the State Fair of Texas as a judge in the Creative Arts Division for Canned Goods. When I'm not doing any of those things we're camping or traveling.

      Thank you so much! Yes, the eggplant has seeds - I kept them in for this recipe. They're edible and generally safe, though they can sometimes be a bit bitter or have a slightly crunchy texture. In younger eggplants, the seeds are small and tender, so they’re less noticeable. As eggplants mature, the seeds can become larger and more prominent, which might affect texture and taste.
      Removing eggplant seeds is usually a simple process. Here’s a method to do it effectively: Slice the eggplant in half lengthwise or into rounds, depending on your recipe. Use a spoon or a melon baller to gently scoop out the seeds. If you're working with halved eggplants, you can also use a small spoon to scrape out the seeds and some of the flesh if needed. If there are still some seeds clinging to the flesh, you can rinse the cut pieces under water to remove them. Pat the eggplant dry with a paper towel to remove excess moisture.
      For some recipes, like eggplant Parmesan or baba ganoush, you might not need to remove all the seeds, especially if they're small and tender. If you're concerned about bitterness, salting the eggplant before cooking can help reduce it, but it's more about the whole texture and flavor balance than just the seeds.
