Coconut and lime pavlova | Baking with Hayley
It was dessert week on the Great British Bake Off this week and so I immediately wanted to make a pavlova as soon as I saw the signature bake!
Mine did crack and isn't perfect, however it tastes delicious and I don't really have an issue with a cracked pav. It's just more space for the cream and fruit!
For this recipe you will need:
6 eggs whites
375g caster sugar
2 1/2 tsp cornflour
40g desiccated coconut (plus another 10g to toast in a pan)
200ml double cream
200g greek yoghurt
1 lime
6 kiwi fruit

      It’s in case you have any issues with the syrup leaking out (no need to use unless you’re using a springform tin or a loose bottomed tin!)

    I tried and they were ok, but the buns were more “bready” than “buny” and a little bit chewy. Is there a reason why it should be a high gluten flour as opposed to a lighter blend, I’m just wondering if it was the high gluten making them a bit chewy please? Not really a baker, so apologies if I’m asking something daft. I know when I make Chinese steamed buns I hunt around for the very lowest gluten I can source.

      You need a strong bread flour as these are an enriched bread dough, so should be a soft, sweet version of a bread dough. A lighter flour would end up with a more cake-like texture. However if that’s your preference you could try it! It might be harder to shape the buns using lighter flour (I’ve not tried this way so can’t say for sure!)

      I always think making pastry yourself is better, but that’s because I enjoy the process! Also making puff pastry from scratch gives a more buttery flavour, as shop bought doesn’t use the same butter content. However it would still be delicious if you wanted to buy pastry ready made!

    Oh my! that looks just like the ''butterscotch'' pies/tarts we make here in America. Except we add egg yolks, a little vanilla essence and a couple tablespoons of butter to the mixture. Then it is baked in the crust till set. looks Divine!

    Marmite, Vegemite, Bovril… I could live with that.. Butter a toast drizzle with one of those, is just plain heaven to me.. I lived in Netherlands, and my inlaws would eat croissants, drizzle some Marmite on… omg! I never stopped doing that since.. 😂 Sooo good! Thanks for sharing!

    great recipe . When I took the dough from the mixer , mine was really sticky so I used maybe too much flour on the surface to kneed Like you said it makes the buns slightly heavy. any idea why my was sticky, on your video yours seems smoother. Buns were great though😊

      It could be anything, down to the size of the eggs or even how hot the weather is! I would recommend letting the dough rest for 10 minutes before you take it out of the bowl to knead on the side, this allows the yeast to start working with the gluten in the flour and you'll see this gets less sticky! Hopefully that helps, and thanks for trying my recipe!! :)

      Hi Carol, you can if that's what you've got but they might not be as fluffy as using whole milk. Still worth trying though, it won't have too much of an impact.

    In nearly every every gypsy tart demonstration the finished product isn't shown. From the look of it as a result of the cooking the mixture has risen and split and if we had seen it cut for serving at the end it I suspect that it would have spilled out all soggy with a crust on top which looks unpaletable and which I wouldn't eat. I've read that gypsy tart is very difficult to cook, I failed I believe because the secret is to bake the pastry, fill it with mix and just allow it to set with the help of the residual heat from baking. I've made the same comment elsewhere before but so far no one has replied back, I might be wrong. The consistency required is that achieved by Mr Crusty who supply to Morrisons (only in Kent) although theirs aren't as deep as those we used to get at school.

      Hi @Chrisst, thank you for your comment! To be honest, I forgot to take a final photo before cutting into it as was too eager to eat a slice! I would recommend keeping the oven a bit lower than the recipe suggests, so the cooking is a little slower and encourages setting. It definitely needs the oven to be on, as the residual heat will not bake as firmly. I would also recommend baking on a hot tray underneath the pie dish, as this hot surface cooks from underneath as well as the top. Blind baking the pastry also ensures that the bottom does not become soggy. I hope this helps!

      @@bakingwithhayley8697 Thanks. Baking from underneath/throughly is crucial. I've seen a few films where someone's tried to use a bought pastry case and (where the uploader lets the viewer see it) the inside's always been liquid. Speed's another thing. 1960's dinner ladies had 200 mouths to feed in 20 minutes and I think that the secret, whatever it must be is more to do with how it was cooked than ingredients. I think some of those that know don't realise they know, when asked one said you must mix with a fork for instance. That secret is up there with the coke recipe if you ask me. Fortunately I can currently rely on Morrisons, I even know the bloke whose idea it was to sell them, not that I'm mad about them or anything!
