    Another beautiful video!! It's interesting to compare the species you find in Canada (or in North Amercica) with the species we find in Europe (I live in France). This time it seems to be the same mushroom : Craterellus tubaeformis, yellowfoot chanterelle or Chanterelles en tube in french. It's a very common mushroom here but quite underrated.😉 This year was pretty good for chanterelles. We also find a very similar mushroom called Craterellus lutescens witch is even better than the yellowfoots, it smells incredibly good (fruity smell). The most popular mushroom here, during the automn season, is Boletus edulis (and the similar species like Boletus aestivalus, aereus or pinophilus). Yellow chanterelles are also very popular (Cantarellus cibarius or pallens for the most common). Ouf...it was quite hard for me to write a message in english😁😁 Congratulations for this video, I'm wainting for the next one. Ps: in France the morels season is going to start in less than 2 months, I'm so impatient!!!!!🙂😁😁

      That season, we were camping on our friends wilderness ranch. That structure was originally used as an ultralight airplane storage space

    Beautiful yellowfoots. I find it quite cool that these like when the weather is quite cold. Also the taste is great. And here in Europe it's probably the most overlooked mushroom. Everyone picks golden chanterelles, but most of people don't know and don't pick these.

      Agreed! Very underrated mushrooms. They are starting to gain popularity here recently, but they are still shadowed by golden chanterelles and pine mushrooms during the season.

      I just ordered a variety powder pack (morel, chanterelle, lobster), along with a pack of unpowdered morel, chanterelle and lobster. I hope to make 3 sauces, use the powders to help thicken the sauce and the un-powdered mushrooms as chunks in the sauce. Mix with butter, wine maybe some olive oil. If you have any good recipe suggestions for sauces with these mushrooms, can you throw it in the order? I just throw it on pasta.

      I've come across Scotch bonnets a number of times, but I don't have enough experience with them to say if they are like parmesan, I always thought they were sort of sweet. Regarding mushroom sauces, I've been planning to do some recipes shorts/videos and sauces are a great way to use mushroom powder. You could try a traditional Morilles a la creme, or do a sauce version with the morel powder in place of the whole morels. Butter, shallots, lemon juice, morel powder, white wine, and heavy cream. Or with a mix of powder and whole morels. It's traditionally eaten on french baguette, but it's also good on pasta. Lobster mushroom alfredo is an easy recipe, also quite good. Chantrelle powder is great with fried rice dishes, stir fries, etc. I even made chanterelle powder cheese bread this week, and it lasted all of one day before it was gone. 😂 Thanks for the support

      We are lucky and rarely see insect damage on the Chanterelles here. They do go for a number of the other mushrooms we harvest, like pines and boletes, etc.

      Felco #8 but a cheaper pair works just as well for mushrooms. I just already have two pairs of Felco secateurs because I do a lot of tree pruning and horticulture work in the winter.

    I just finished watching the whole series. I'm speechless. You guys convey the beauty of nature, the adventure and the sense of satisfaction when harvesting those beautiful mushrooms perfectly. It truly felt like I was one of you. Thank you for sharing part of your life and your job for us all to see. I've always worked regular jobs in Japan/Italy which take 1/10th of the dedication and effort of what you're doing but you still managed to make me question my life choices😂😂

      I was lucky enough to be brought along picking at a young age and spent a lot of time in our family mushroom buying station as a kid. Randy started commercially in the 1980s. We have a few stories on our channel talking about this kind of thing. Go to the playlist tab, and it's called "wild harvesting stories." Personally, I love the hunt of fire morels because every year is a new challenge, but there's nothing like popping #1 pine mushroom buttons.

    Nice harvest, and I am by no means an expert, but aren't you supposed to not dig up the roots??? This isn't me being curt, I genuinely want to know... I was always taught to cut them off at the ground and leave the roots...

      You can safely cut or pull mushrooms without harming the mycelium, the living organism in the ground. The mushroom is the fruiting body. Mushrooms don't actually have roots.

      @@williefisterbottom3156 To be fair it is a common misconception. It's probably the most frequent question I get. Thanks for genuinely asking. We do this for a job, so it's in our best interest to take care of our mushroom patches. We've always done both and our patches have grown over the decades of picking in them.

    Looks delicious until I remember I despise the taste of mushrooms 😂 I’ve tried them almost every way because somebody knows how to cook them differently every time I say that.. mushrooms immediately trigger my gag reflex 🤣
