보늬밤 크림 보늬밤 케이크 만들기 Recipe for Syrupped Chestnut Cake with Chestnut cream
104g Butter 버터
1 Vanilla bean 바닐라빈
40g Sugar 설탕
50g Turbinado sugar 터비나도설탕
87g Egg 달걀
104g Cake flour 박력분
2g Baking powder 베이킹파우더
200g Syrupped Chestnut 보늬밤
22g Cream 생크림
Chestnut cream 밤크림
190g Syrupped Chestnut 보늬밤
40g Chestnut syrup 밤시럽
20g Butter 버터
40g Cream cheese 크림치즈
1. 부드러운 상태의 버터에 바닐라빈 씨를 넣어줍니다.
2. 설탕, 터비나도설탕을 넣고 주걱으로 섞어줍니다.
3. 설탕이 날리지 않으면 핸드믹서를 사용하여 색이 밝아지고 설탕 입자가 보이지 않을때까지 휘핑합니다.
4. 달걀을 2번에 걸쳐 넣으며 휘핑합니다.
5. 충분히 휘핑하여 버터와 달걀이 잘섞이면 베이킹파우더, 박력분을 체쳐넣어줍니다.
6. 가루가 거의 보이지 않을때까지 섞어줍니다.
7. 보늬밤을 작은 크기로 자른 후 물기를 제거하여 반죽에 넣어줍니다.
8. 생크림도 함께 넣은 후 섞어줍니다.
9. 완성된 반죽을 짤주머니에 넣고 입구를 크게 자른 후 틀에 넣어줍니다.
10. 예열한 오븐에 170도 25분 구운 후 완전히 식혀줍니다.
Chestnut cream 밤크림
1. 보늬밤에 밤시럽을 넣고 핸드믹서 혹은 믹서기로 완전히 갈아줍니다.
2. 페이스트 상태가 되면 부드러운 버터를 넣고 한번더 갈아줍니다.
3. 크림치즈를 넣고 섞어 완성합니다.
조립 Finish
1. 원형10호까지를 끼운 짤주머니에 크림을 넣고 완전히 식은 밤케이크에 크림을 짜서 마무리합니다.
