The Best Oxtail Stew Recipe Ever!
- 3 lbs oxtails
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 2 bay leaves
- thyme
- rosemary
- 1 tsp paprika
- 1 tsp cayenne pepper
- salt to taste
- red wine
Instructions
1. Prep the oxtails:
- Season the oxtails with salt and spices
2.Sear the oxtails:
- Heat the olive oil in a large pan.
- Add the oxtails and sear on all sides until browned . Remove and set aside.
3. Saute Vegetables:
- In the same pan, add the chopped onion, garlic, peppers, thyme, bay leaves and rosemary.
- Saute for about 5-7 minutes until the vegetables are softened.
4. Deglaze the Pan:
- Pour in the red wine and oxtail stock.
5. Simmer
- Reduce the heat to low, cover, and let it simmer for about 3 hours, or until the oxtails are tender and the meat is falling off the bone. You can also cook this on slow cooker on low for 6-8 hours.
6. Final Touches:
- Add carrots in the last 15- 20 minutes of cooking.
- Taste and adjust the seasoning with salt and pepper if needed.
7. Serve.
