I love this 629 seasoning but haven't been brave enough yet to use a 1/2 package of this for one cook as you did. I would've thought that this would be over powering. How much onion do you use?

A pumpkin spice latte (PSL) is a super popular fall drink here in America. It's basically a coffee with steamed milk, pumpkin flavor, and spices like cinnamon and nutmeg. I've never heard of using bactoferm cultures when making venison summer sausage. I have always used Prague Powder #2 for cure and I use a recipe from Traeger for my dry ingrediens which I combine into the meat. Margoram, salt, pepper, garlic powder, mustard seed ect. I then let the grind set covered in the fridge overnight, stuff my fibrous casings, then smoke in my Masterbuilt vertical smoker at 225 intill the meat internal is 165. Quick water bath to stop the cooking then cool in fridge. I've never used a pre-mix seasoning and have often wondered about adding the high temp cheddar, which I think i will try soon.
Great video. Thank you for that. Instead of water I'm using milk as a liquid (sometimes a smooth tasting beer. Not a craft one. I call it the Bavarian Beer Hall Bratwurst) and also 4 full eggs per 1 kg of meat. If you don't use them next couple of days just precook them for food safety. I also brush the bratwurst with milk while on the BBQ. Gives them a nice brown colour.

Pineapple isn't actually a "traditional" Hawaiian flavor apparently. Dole was a big exporter of pineapple from Hawaii after the plant was established there, and that is where the 'American-hawaiian fusion' of pineapple came from. Its not usually featured in traditional hawaiian dishes, but is eaten alone as a snack or in a fruit salad most commonly. Still delicious though
