It is made from the loins. The packing house gets loins and injects them with brine solution. Sets in vats for couple days. Then is stuffed in a casing and hung on trees. Then into smoke house.
I cannot stand meat where sweet was added. Its attrocious to my personal taste buds. Gives me a sick feeling thinking about it. Its funny because alot of males i know think the same. Females tend to love it for some reason. I cannot wait to try this though less the “sweet”

Fish has a pellicle also- it happens after the air blows over it for about 30 minutes!
