Could the pressure put extra stress on the yeast so it slows down in the fermenter then comes back to full life when bottled?
Something like that for sure, I assume the pressure is stopping the last of the ferment. I may go back to non pressure ferments for my bottled beers and just go old school. If it is happening with kegged beers you aren't going to know.

I haven’t looked back since going all grain. Before switching I did get some ok results with the Country Brewer cans which were pitched to me as being fresher due to there higher turn over? Are you planning on testing some of their extract tins? All grain can be a bit time consuming when busy and It would be good to knock out a quick extract brew every now and again. Keep up the good work!
I don't have easy access but they are on the list, so some time more than likely.
nice head on the beer. i usually use 1 and a half carbonation tabs per 16 oz bottle using coopers drops. and for a 12 oz bottle only 1 tab. 2 weeks later its ready
Could it be that when you pressureferment the beer already have some carbonation when you bottle it, and then you add the normal amount of carbonation sugar to the bottles and thus you get the normal carblevel PLUS the amount that was already in the beer when bottling?
I don;t add any sugar to the bottle. They are bottled at pressure, but shouldn't get any higher, which it is doing.

Looking forward to the pacific Ale, I did mine with NZ hops and my neighbour did his with Galaxy, I preferred his, and funnily enough he preferred mine. So we swapped 6 bottles. With my pacific Ale I used the brick road LDME, neighbour used liquid malt from Muntons, enjoy
I'm interested to see how a more standard style goes from Brick Road....

Hey little Jon, how long do you usually leave your kegs priming for before you cool down and put on gas? Thanks
I don't prime my kegs as a standard thing, I pressure ferment and transfers carbonated beer to the keg. When I do keg prime, I add 70gm of dextrose on transfer, purge keg and let sit at room temp for 14-21 days then stick in the fridge on gas at serving pressure, if they aren't quite fully gassed they only need a few days to get there and they have had some time to settle and condition.

yeah It went alright, I've got a few of the Cellar Science yeasts to play with.

Hey John, thanks again for another review of our kits. You didn't happen to record the best before dates on the cans you used? These do look much darker than we would normally expect with the combination of these cans being 90% lager malt and 10% maltose. We know that malt extract does darken over time, and is accelerated when stored in higher ambient temperatures for extend periods of time. Would be very interested to know how old these cans were, on the off chance you did record it, cheers!
I don't record the use by dates of the cans I use and in all honesty I rarely even look at it. I do remember looking at this tin though, because I had purchased this with a Pilsner Blond that was also a little dark, I recall it being something like 5-7 months before BB. I would prefer to have fresher tins but due to the nature of Extractaganza I buy tins straight from teh shelf or online as is because that's what every brewer is contending with. Out of interest how long is the BB on the Black Rock kits.
@@littlejohnsbrewing I thought that would be the case, but just thought I would check. 2 years on our kits which I think is standard in most of the industry, except I think the other B.R brand who put 3 years (will be interesting to see the colour of them after that long!). But storage temperature does play a massive part in accelerating the darkening of extract so sitting on the shelf in a cooler temperature store will be much kinder to the wort than in a hotter climate area.
@@blackrockhomebrewing6697 unfortunately the other BR has had an impact on the availability of Black Rock which just makes it harder to get fresh stock. I would really like to be able to do kits as fresh as possible but it just isn't possible and as I said, that is the reality if the kit brewer, you are somewhat at the mercy of the brew shop, it's turnover ratio's and their storage setup.
Took me a few minutes to follow this one. I didn't initial understand why the pouch volume was so small in comparison to a fresh wort kit which is almost what this is. Let me confirm if I have this right... The pouch is essentially just your specialty grains and hops hence why the volume is so small and the dry ingredients are intended to replace the base malt? In terms of pricing does the 30 bucks include dry ingredients and yeast?
That's pretty much it. All ingredients and yeast $30-$35 depending on brew.

Hay mate just wondering how long you brewed it for ? You said 15c for five days then did you step up the temp ?
Without checking my notes(which requires going outside to the brewery) I would expect that I would have raised to 18-19c for another 4-7 days and then cold crashed.
What temp do you cold crash at 4.5c sorry for all the questions mate new to the brew game and love your shows top notch chhers agian 👍?@littlejohnsbrewing

I have seen a video recently where the fella used a dry enzyme in his kit brew to pull the final gravity down lower, what's your thoughts on that.
I prefer to use a heavy dex mix to get the gravity down, but dry enzyme works OK. I've tested both side by side and found the dex to be better, but if you need to reduce carbs levels enzyme does the job, plenty of people use it to get a light bodied brew.

You did find the way to make twang unnoticeable in the end. Add a 250 gram bag of Coc@ine to every extract brew. 🎅

I pressure ferment mainly to flush the keg with co² and then to close transfer into the keg. I've definitely seen a great difference in the quality of my beer and the longevity of them

cheers Skid.... by the way, Sure Could Schwarz is underway, day 9 as we speak, just put into a D rest. Had to make some changes with the hops due to an inventory muck up. Came in a little lower on the OG than expected but still sitting around 5.3% from the FV, I'm happy with that.

Kegging my slightly amped up version of a Coopers Mid Ale tomorrow. 4.5% instead of 3.5 Stovetop mash 2kg Pale 150g Wheat 100g light crystal 14g POR @ 45min 20g Saaz @ 5min IBU 22 Harvested yeast from a 6er of Mid Ale added wort to fermenter with 1kg LDM 250g BE1 filled to 20 litres If it's any good I'll play around with LDM and sugar ratios to dial it in. I've tried doing a hybrid before with the stovetop mash and just adding a tin of Coopers APA, but the twang is still there. Thanks for all your work LJ, you're really helped me heaps with my brewing :)

@@littlejohnsbrewingSo I've tried a 3 weeks bottled tester. Seems like a little Saaz goes a long way. As it's pretty prominent. Reminds me of a Beez Neez clone I did ages ago with Hallertau which tastes similar to Saaz. Hopefully it settles down over time. The Coopers Mild Ale says it uses Saaz, I'm guessing not much 😊
The All Inn brewing fresh wort kits do a nice beer. Tried a few of them now. And when you cant be bothered doing all grain its much better than the extract results... i know its not the topic but it kinda is...
FWK's are an easy way to get decent beer..... that being said, I've had a few that were well less than good.
Looks good john. Might try making a batch myself soon. If i cant get that yeast what do you recommend as alternatives

I love these tins they are just as good as freshwort kits in my opinion.I have just gave the American amber ale a go.I get wild berry flavour I love it.when I don’t find time for all grain I put these kits down.They are generous on the hops.
They are generally a very good kit. I have had a miss with the Cerveza.
