Somehow this brew slipped through the cracks and never got published. As much a Twang Files brew as it is an extractaganza. I compare the results of using 2 different yeast strains, 1 English, 1 American as has been attested to eradicating twang. G’day John. I’ve been a kit with additions (steeping specialty grains, adjuncts etc.) brewer for a while but this and the Schwarzbier have convinced me that I should make the step up and give this method a go. I have a few questions that I was hoping you could answer: 1. Water - I usually brew with spring water. Will that work with this method or am I better off using tap water and getting into water chemistry? Or is plain tap water (Wollongong) fine? 2. Lager/hops - I’d happily brew this as is but would also like to try adapting it using different hops. I saw in another comment that German noble hops would work. If I did a straight substitute with Tettnang, with the quantities be the same (or similar)? Also, I’m a fan of Galaxy Lager (Kingsley’s passionfruit Cerveza). Could that work with this base or would it need a lighter malt base? And I’m guessing it would need a different bittering hop. Is magnum the best option? 3. I’m also keen to use this method for a stout. I’ve done a kit based coffee chocolate milk stout that I’d like to replicate. Would you be able to suggest a combination of steeping grains and dry extract? For reference, in the kit version I use 200 g dark chocolate and 200 g Carapils. The tins are BR oatmeal stout x 2 and I add 500 g dark dry malt and 250 g light dry malt. Thank you and cheers.
1; Wollongong water is fine, probably best municipal water in the country but treat for chlorine with sodium metabisulphite(campden tablets) and vit c. Or just use your spring water. Chemical are not needed but endof day would be benefiical for fine tuning a profile or taste. 2; Swapping hops isn;t straight forward, especially nobles, they are about half the AA % of POR. You would need to adjust for that. Plug numbers into some software to get similar IBU. Galaxy and similar hops will work but this is a deeper base and more suited to a straight up bitter hop. You could swap bittering for Magnum/Warrior to get it clean and get 4-6 IBU late with something fruity. Worth a try. 3; I've not pieced together a Stout with this method as yet but try this is a starting point: start with the grain and malts you have been using, add another 100gm chocolate, 200gm Roast Barley and 200gm Pale Crystal. Boil around 25gm East Kent Goldings for 45 minutes and another 20gm at 10 minutes. Add an extra kilo each dark and light dry malt, plus 500gm dex. Guessing aroung 5,5-6% ABV. *this off top of my head, so don't come looking for me if it's shit.

Know this recipe should work with different hops. What alternatives to Pride Of Ringwood would you recommend please?
@@philiplawry9382 This brew is malt focussed to be true Aussie, so Super Pride will work, a bit cleaner and softer than POR. It would handle some Noble’s, like Hallertau, Tettnang or Hersbrucker… probably a little beefy for Saaz. You could look at dropping something fruity in the late boil and bring in some flavour that way. I’ve never done it any way other than straight up old school so can’t say for sure.

Nice update. I've been cutting back somewhat on my brewing too, mainly because it's getting in the way of my "solo" music career. From 2016 to about 2021 I averaged between 35 and 40 brews a year. This year is 21. Next year will be 12 to 18. Glad to hear your message about traveling. It's madness here too. Pittsburgh is terrible. I can see it though my living room window. I live in a residential neighborhood on a steep hill with a 25 mph speed limit and f**king horse's-asses use our street all day long as a short-cut, flying up and down the hill with no regard. Our highways are even worse. I don't understand it. Stay safe, cheers and Merry Christmas John!

Stoked with the direction the channel is heading in. I switched to ldm after the twang files discovered twang in the unhopped liquid malt and I'm looking forward to more recipes in the new year 👍

I make great beer from my local hbs kit's. I like my beer better than the pub, local brewery, and local tap house. But i love your content.

according to my notes, 12psi, which is probably what it got to, not where I was aiming, would have been aiming for 18psi to keg it service ready.Possibly start to wind pressure up from day 4.

I really enjoy your honesty. I find your videos very informative which is something I'm always on the lookout for. There's always something else to learn. I've been a home brewer for 20+ years but I've only been brewing all grain for about 3 years. At some point, I'll give powdered extract a go! Thanks.

If you heat the lemon juice with sugar you will invert the sugar so you don't need to pay for Dextrose.
If I pay for dextrose I don't need to make invert sugar..... mind you dex is getting pricier all the time.

That's a thoughtful, challenging video LJ. Thanks for sharing your thoughts. The idea of using DME rather than grain appeals big time, especially if twang is eliminated. With no chill brewing, the whole process could be even less than two hours. But, we are scientists 🙂. Just a few batches aren't proof enough. Let's all of us give this a go and share our outcomes.
I would love to see more brewers doing it and sharing their results, I have no doubt they will make great beer.

Are you using liquid extract or dry? liquid is pretty much the standard goto, but the results with dry are so much better. If you are doing liquid, have a go with dry, it's worth it.
I only use dry. I don't like working with liquid

@littlejohnsbrewing I can get 6 different types of dry here, from pilsner to dark.
@@ssadams I can get the 6 as well, so it makes it possible to make most beers straight from dry.
Have you tried the chillie ginger beer kit hot date by hoppydays brewing supplies got some kick has dried fermented habenero powder in it pretty nice
I have not tried the Hoppy Days kits, have heard some good things about them.

Great video. And thanks for the shout out! It was an honor to provide you with one of my own recipes. I'm over the moon, especially knowing how well it turned out and how much you like it. Your description sounds exactly the way mine tastes. So, well done sir! I was definitely inspired by a local Schwarzbier. As for the actual sources to build the recipe, the base of Pilsner and Munich is pretty standard, but for specialty malts I checked all my brewing books and each recipe called for a different round of specialty malts. So I finally came up with my own specialty grain bill based on what I knew I could get away with. I think the Melanoidin touch came from an old episode of a podcast I listen to called BeerSmith. Ever since I found your channel in 2016, you've inspired me to keep brewing and experimenting, and to brew the best beer I can with what I have available to me in terms of equipment, ingredients and time, and I thank you for that. It's my absolute pleasure mate, on many levels. I think I will incorporate a little roast the next time around to see how that rounds it out, I don;t think 2-3% would hurt.

@ yeah nice. To be completely honest, it’s worrying me that there hasn’t really been any negative feedback at all. Besides the flavour being bumped up, I have nothing else to go on, to improve the se pouches. So yeah, please send any negative feedback!
@@christurner1791 probably good feedback if people aren't saying you need to improve them, means people are liking them as they are, and it's no wonder. My only issue was that there could have been a little more heat, ie chili bite, but that's a minor issue and not a neccessity. As it sits, it is a bloody good ginger beer and will no doubt be very much to the liking of the masses. Look at what's popular..... easy drinking, lighter flavour versions that don;t burn. You may have just hit on a winner straight up.

Nice looking beer (I watched the brew day footage too by the way). I'm fascinated by these kits. What a great concept. I wish someone would offer something like this in the US. You've probably heard me say that the vast majority of US shops no longer offer kits (tins) anymore. If you want them you have to order from the manufacturers, and freshness is a huge issue. So they're not worth it. I'd buy kits like Nowronian has in a heartbeat for when I don't have time to do a full brew day. Great video. Cheers

Do you find wb06 gives a tart taste? I prefer MJ,s M 20 yeast for wheat beer
@@richardfuller7361 never found it to be driven by the yeast, wheat produces tartness, but the level is quite mash driven. WB-06 is a tame version of the yeast, never used M20 so don’t know how it compares, would assume they’d be very similar to each other, bearing in mind that ferment temp can cause fairly different results across wheat strains.
