Sourdough Pancakes Recipe 🥞 Easy + Delicious | Sourdough Discard Pancakes | Jessica Rosetti
My favorite sourdough pancake recipe is simple to whip up with just a few basic ingredients. Add things like cinnamon, almond extract, blueberries or chocolate chips to make them an extra special weekend morning treat.

RECIPE:
1/4 c sourdough discard
1/2 c almond milk or other milk
1 tbsp white granulated sugar
1 tsp vanilla extract
1/2 c flour
1 tsp baking powder
Pinch of salt
Serves 2
Combine ingredients in a large bowl, let rest for 15 to 20 minutes.
Heat a non stick pan over medium heat and grease with coconut oil or butter.
Pour about 1/3 c batter into the center of the pan and cook until bubbly and edges of pancake are brown, about 3-4 minutes.
Flip and cook for 1-2 minutes longer. Top with butter and maple syrup or toppings of your choice!

    Crumble Topping: 4 tbsp cold butter, cubed 1/4 c brown sugar 1/2 c all purpose flour 2 tsp cinnamon 1 tsp salt 1/2 c chopped pecans Cake: 1 c sugar 1/2 c butter, room temperature 3 eggs, room temperature 1/3 c maple syrup 1 c creme fraiche or sour cream, room temperature 1 tsp vanilla extract 2 c flour 1 c toasted pecans, pulsed into a coarse grind 1/2 tsp baking soda 1 1/2 tsp baking powder 1 tsp salt Icing: 3/4 c powdered sugar 1 tbsp maple syrup 1 tbsp heavy cream Preheat oven to 350 degrees and grease a 9x9 baking pan. In a medium bowl add ingredients for crumble topping. Using a fork or your fingers, press butter into flour mixture until pea-sized clusters form. Set aside. In a large bowl add sugar and butter. Use a handheld mixture to beat until light and fluffy. Add eggs, one at a time, mixing after each addition. Add creme fraiche, maple syrup and vanilla extract. Mix until combined. In a small bowl, combine flour, salt, baking powder and soda, as well as crushed pecans. Mix together and pour into egg mixture. Beat until just combined. Pour batter into 9x9 pan and top with crumble topping. Bake for 50-55 minutes until a cake tester comes clean. Let cool for 20 minutes. In a small bowl, combine powdered sugar, maple syrup and heavy cream, whisking until no clumps remain.     Crust (Makes top and bottom): 2 ½ cups (315 g) all-purpose flour 1 teaspoon (5 g) sea salt 2 tablespoons (25 g) sugar 1 cup (226g) unsalted butter cold 1/2 cup ice water Filling: 2 lbs Granny Smith Apples, peeled, cored 6-7 apples (7 cups thinly sliced) 1 1/2 tsp cinnamon 8 Tbsp unsalted butter 3 Tbsp all-purpose flour 1/4 cup water 2/3 cup granulated sugar 1/4 c brown sugar 1/2 tsp salt 1 tsp vanilla extract 1 egg , + 1 Tbsp water, for egg wash Instructions: Place flour, sugar and salt into the bowl of a food processor and pulse a few times to combine. Add cold diced butter and pulse the mixture until coarse crumbs form with some pea-sized pieces then stop mixing. Mixture should remain dry and powdery. Add 7 Tbsp ice water and pulse just until moist clumps or small balls form. Press a piece of dough between your finger tips and if the dough sticks together, you have added enough water. If not, add more water a teaspoon full at a time. Be careful not to add too much water or the dough will be sticky and difficult to roll out. Transfer dough to a clean work surface, and gather dough together into a ball. Divide dough in half and flatten to form 2 disks. Cover with plastic wrap and refrigerate for at least 1 hour. Preheat oven to 375 degrees. Melt butter in a medium saucepan over medium heat until excess water evaporates and brown bits form, about 5-6 minutes. Remove from heat and whisk in 3 Tbsp og flour. Whisk in 1/4 cup water, white and brown sugar, salt, cinnamon and vanilla extract. Set aside. Peel, remove cores and thinly slice 7 cups of apples and place them in a large bowl. Sprinkle the top with 1 1/2 tsp cinnamon and toss to combine. Pour the sauce over the apples and stir to coat the apple slices. Sprinkle your work surface with flour and roll out bottom pie crust to a 12" diameter circle. Wrap it around your rolling pin to transfer it to the 9" pie plate. Add apple mixture, mounding slightly in the center and being careful not to get the filling on the edges which would make it difficult to seal. Roll second crust into an 11" round and cut into 10 even thickness strips using a pizza cutter. Arrange strips in a woven lattice pattern over the top. Beat together 1 egg and 1 Tbsp water and brush the top with egg mixture. Bake at 375˚F in the center of the oven for 1 hour.* Rest at room temp 1 hour before serving.

    Pumpkin Meringue Tart 🎃 🍁 🦃 RECIPE BELOW Crust: 12 full-sheet cinnamon graham crackers (I used @annieshomegrown Cinnamon) 6 tbsp unsalted butter, melted 2 tbsp sugar Filling: 1 1/2 c pumpkin puree 2/3 c brown sugar 3/4 c half & half 1 egg + egg yolk 2 tsp pumpkin pie spice Meringue: 5 egg whites 1/2 c sugar 1/4 tsp cream of tartar Instructions: Preheat the oven to 350°F Make the crust: In a food processor, pulse the graham cracker into a small crumb. Stir the crumbs, butter and sugar together and pour into 10 inch tart pan. With medium pressure using your hand, pat the crumbs down into the bottom and up the sides to make a compact crust. Do not pack down with heavy force because that makes the crust too hard. Bake for 12 minutes. Make the filling: Whisk all of the filling ingredients together until combined and smooth. Pour filling into warm crust. Place on a baking sheet and bake until the center of the tart is set-about 45-48 minutes.Remove tart from the oven, place on a wire rack, and cool completely for at least 4-5 hours. Make the meringue: Place egg whites, sugar, and cream of tartar in a heatproof bowl. Set bowl over a saucepan filled with 2 inches of simmering water. Do not let it touch the water. Stir constantly until sugar is dissolved and mixture has melted and reached 160°F. Remove from heat. Using a handheld or stand mixer fitted with a whisk attachment, beat on high speed for 5 minutes or until stiff glossy peaks form. Spread meringue on top of cooled pie. If desired, toast the marshmallow topping with a kitchen torch just before serving. Serve immediately or store at room temperature or in the refrigerator, uncovered, for up to 8 hours before serving. #dessert #thanksgiving #thanksgiving🦃 #pumpkinpie

    Honey Herb Dinner Rolls 🤤 Just in time for #thanksgiving 🦃 You’ve gottaaaaa make ‘em! Ingredients: 1/2c milk, warmed to about 110 degrees 1/4 c honey 2 1/2 tsp active dry yeast 3 eggs (2 for dough, 1 reserved for brushing on top of rolls prior to baking) 1 c sour cream 1 tbsp salt + flaky sea salt for topping, if desired 5 1/2 c bread flour, plus more for work surface if needed 10 tbsp butter, as follows 6 tbsp unsalted butter + 2 tbsp for greasing pan + 2 tbsp for brushing on top of rolls 1 tbsp + 1 tsp Hot Crispy Oil 1/3 c fresh chopped herbs, such as parsley, rosemary and sage Instructions: In the bowl of a stand mixer with dough hook, combine 1/2 cup warm milk, yeast, and honey. Let stand until foamy, about 5 minutes. Stir in sour cream and 2 eggs. With mixer running on medium-low speed, gradually add flour, beating until combined. Add butter, one tablespoon at a time, until incorporated. Increase mixer speed to medium, add 1 tbsp of Hot Crispy Oil, herbs and beat until dough is smooth and elastic, 6 to 8 minutes. Cover dough and let stand at warm room temperature until doubled in volume, about 1 hour. Turn dough out onto a clean work surface, and divide into 24 pieces. Shape into balls, and arrange dough balls in a 13- x 9-inch baking pan greased with 2 tbsp butter. Cover loosely with plastic wrap. Let dough balls stand at warm room temperature until almost doubled in volume, 45 minutes to 1 hour. Preheat oven to 375°F during final 20 minutes of proofing. Whisk together 1 egg and 1 tsp warm water in a small bowl. Uncover rolls, and brush lightly with egg mixture. Bake in preheated oven until golden brown, 20 to 25 minutes. Brush tops of hot rolls evenly with reserved 2 tablespoon of butter mixed with 1 tsp of Hot Crispy Oil. Sprinkle with flaky sea salt to taste. Serve warm.

    Serves 2 1 large eggplant, sliced into 8 slices 1 c GF flour 2 tbsp cornstarch 1/2 plain non dairy milk 2/3 c GF breadcrumbs 1/4 c almond flour 2 tbsp nutritional yeast 1/4 tsp each of salt and pepper 1/2 tsp Italian seasoning 2 c tomato sauce of choice Non dairy mozzarella Fresh basil Preheat an oven to 425°. Grease a baking sheet with olive oil. line up three shallow bowls. One with gluten-free flour, one with a mixture of cornstarch and almond milk. The remaining bowl with breadcrumb, almond flour, and seasoning. Dredge eggplant slices in flour. Dip into cornstarch and milk mixture. Cover and breadcrumb mixture. Bake for 20 minutes, turning halfway through.     Citrus Olive Oil Cake 🍊 Ingredients: 2 cups all-purpose flour 1 1/2 sugar 1 teaspoons kosher salt 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1 1/4 cup good quality extra-virgin olive oil 1 cup whole milk 3 large eggs, room temperature Zest of one grapefruit, lemon and orange 1/4 cup fresh orange juice Directions: Heat the oven to 350° F. Generously spray a 9 inch round cake pan and set aside. In a bowl, whisk the flour, sugar, salt, baking soda and powder. In another bowl, whisk the olive oil, milk, eggs, zest and juice. Add the dry ingredients; whisk until just combined. Pour the batter into the prepared pan and bake for 1 hour, until the top is golden and a cake tester comes out clean. Transfer the cake to a rack and let cool for 30 minutes.     If you let it marinate in that for a day or 2 it'll be great. Tofu just needs time to soak up flavor and be cooked to the right consistency and it's great.

    Peanut Butter Oreo Cookies 🍪 2 sticks of butter, softened 1/3 c sugar 2/3 c brown sugar 1/3 c creamy peanut butter 2 tsp vanilla extract 2 large eggs 1 3/4 c flour 1 tsp baking soda 1/2 tsp salt 12 Oreos, crushed (divided) 1/2 c chocolate chips in a large bowl add butter and sugars. Using a handheld mixture beat until creamy. Add eggs, vanilla extract and peanut butter. Beat to combine. Add in flour, salt and baking soda. Beat until just combine. Fold in chocolate chips and half of crushed oreos. Using a cookie scoop, scoop 12 equal portions onto a parchment lined baking sheet. Refrigerate for 1 hour. Preheat oven to 350 degrees. Bake cookies for 14-16 minutes.
