Just finished building one and it works really well. Different fan, but one of the ones recommended. different hvac hepa filter since I couldn't find that brand in Canada. The filter still fit perfectly inside the fan. I could not get rid of turbulent flow near the top front edge of the opening, so I installed a 6" wide piece of ply across the top and that worked perfectly. I guess the fan was not quite strong enough, but for the slightly narrower front opening, it is perfect.

One truth; i have worked with a large spirits company, and they inducted me and trained me. I learnt they don't have time to brew or age, or else they would stay behind in the market. So they have labs. These labs use patented colours, flavours and age chemicals which are not healthy. This practice is what keeps them producing so much alcohol. Ok where do they buy ethyl alcohol in bulk? From the government. Ethyl alcohol is also part of the fossil fuel industry and the sugar industry. These spirits companies buy this ALCOHOL from the government at a few cents a litre. Then they add the flavouring and colouring and age chemicals. And they all look standard. If a company is brewing naturally, then you will find inconsistencies in flavour and colour. That is the natural way and a healthier way. Hope this helps.

Try setting timer to zero and holding the timer power button down. I can set mine up to 99mins

It kills me to see all these internet brewers add all these additives like citric acid when there are natural ways to get this effect. At least that and the yeast nutrient were the only two things i noticed up until when i stopped watching. Some of the wine guys do nonstop additives.

What's your thoughts on adding the hammerhead condenser? Do you see much benefit?

What a great video, mate! Thanks for sharing all your work, there was lots of sweat into this build. I'll be building mine pretty soon and you've cleared a lot of questions I had. There is just one thing that might make your build stronger: When cutting and assembling the wood, If you rest the top plate on top of the side and back plates you get a lot more support for your fan and filters. Instead of fixing the top plate flush on the inside of the 3 sides, you could use the sides as columns to support your "ceiling". That way, if your screws somehow fail, the top plate won't slide down into the box, it will be held by the side and back plates. Oh, and that bottom back plate was a killer move! Amazing build, mate!

You could use a beer yeast to ferment instead and then you wouldn't need to back sweeten. Ive made a ginger beer with Nottingham yeast and it was awesome

And from someone who used to make legit rum and barrel age it for years, I’d probably like this video, but I just can’t watch him.
