Sourdough discard zucchini bread.
Sourdough discard zucchini bread.
Preheat your oven to 350°. Butter or spray 9x5 loaf pan.
Wet ingredients:
1/2 cup softened butter
1 1/4 cup brown sugar
2 cups shredded zucchini
1 teaspoon vanilla
2 large eggs
1/2 sourdough discard
Dry ingredients:
2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt.
Instructions:
1. Combined all dry ingredients stir and set a side.
2. In stand mixer or bowl combined all wet ingredients.
3. Mix in dry ingredients.
4. If your going to add in nuts or whatever do now.
5. Pour into 9×5 loaf pan.
6. Bake for 50 minutes to 1 hour. Check to see if it is done at 50 minutes.

What I did was used all-purpose flour 3/8 cup and 1/4 cup distilled water. and feed it once in the am and once in the pm. I started it on a Saturday because I wanted my bake day to be on Saturdays. While doing this process I leave it on the counterI kept adding to the bowl until that first Saturday than I took out and put 1/2 cup into another bowl. I used the left over starter for pancakes and waffles. Did this process until I decided to try and see if it was mature. To test it. I put 1/2 cup of starter in two wide mouth pint jars. I put one in the fridge and left the other on the counter. If the one in the fridge doubles the counter starter. You have a mature starter.
How do you make sourdough starter?
Do you feed your starter and let it rise some before you use? Or use right out of the jar? 😊
