A fact for High Wire: you can keep the chopper having finished the mission. This is the only way you can get a Maverick apart from stealing one.

Regarding car damage, if you flip over in a car that has no roof or soft top, you die. And not sure about this now, but I remember that even in hard top cars would a rollover kill you if the roof is caved in enough.
