    didnt seem like the syrup was very thick even after the condensing. Do you think it would be okay if I added a small amount of thickener like corn starch to the grapefruit syrup?

      It’s not necessary to add a thickener to simple syrups like this. Just boil it longer to reduce more water out and it will get thicker. Bear in mind it will still be loose when warm so you may need to let it cool to see how thick it is at room temp

      @@cd5139 In general I agree with you. they CAN be though if thats what someone wants haha If you boil them down long enough they turn into a super viscous liquid that eventually ends up as a jolly rancher like candy

    Yum. That's how I've been making mine for years now. The only thing I do different is to melt the butter and add a little garlic to sauté before adding the cream. But then we really like garlic.

    It is certainly a nice simple recipe. On the subject of the pasta to sauce ratio... when the sauce is basically 2 types of fats... Italy probably got the ratio right, looking at their country's health data. Can I suggest stealing another phone/camera from someone, so you can get 2 shots at the same time and then cut between them...

    It looks delicious. Can you make it in a popover pan? I have the impression, perhaps mistaken, I guess from reading descriptions in novels and such, that home cooks sometimes pour the batter straight into a roasting pan, in the last few minutes, and cook it underneath a roast beef. Is that true?

      @@brucetidwell7715 not sure about cooking it under the roasting pan but it’d make sense since they are served with roasts and gravy. As for a popover pan I was informed by a helpful Brit that they do it in metal tins like muffin trays and let the batter warm up to room temp before pouring so a popover pan should work and I tend to defer to the local experts!

      I disagree. I thought it was a great video, although one's where they say nothing except describing the ingredients in functional terms and combining them is a legitimate choice. Other people do that.

    My mother made this for my family when I was a kid. She uses clarified bacon grease instead of butter. Such a tasty dish!

      Yep! Any tasty fat/oil that doesn't burn should work well for this dish! Pork lard or beef fat would probably taste great too

    were the beans fresh or frozen? I'm not sure that I can get butter or lima beans up north here. I've grown fava beans myself but they are different, I think, not sure.

      The beans were frozen. Sadly I couldn't find any fresh butter/baby lima beans either but it honestly didn't hurt the dish quality. The main thing is getting fresh corn IMO

    It's nice to see the processes of the type of stuff you've been posting on Facebook over the years. It helps me remember that just because it looks fancy, the processes usually aren't as daunting compared to jist seeing the final product. You really seem to enjoy making the videos, just make sure you dont feel like you have to make them. I'd hate for you to burn out on something you enjoy because it starts to feel like a chore. My only recommendation for your videos would be to normalize your audio levels. The intro music is probably the loudest part (easily twice the volume of the rest) and the recipe intro is still kind of loud compared your voice during cooking. I don't know what software youre using, but there should be an audio meter somewhere in it you can use to adjust your levels. Your vocal audio during cooking is kind of airy, so I dont know how well bringing up that audio level would turn out. Maybe a cheap mic to connect to your camera, or maybe something bluetooth if you're using your phone would work.

      Thanks! I'm still learning some of this and have just figured out how to modify the audio on the individual segments in the editor I use. Hopefully it will be better in future videos and would love to hear your feedback on the next/future ones. As far as burning out, I wanted to just really jump into this and figure out the stuff like what you mentioned so I've done a bunch of videos. I will likely reduce the frequency to a few posts a week in the future haha but so far I actually just find making and editing these videos fun as well
