Everytime people say just mayo and ketchup. The main thing is using honduran cream thats why the dressing is different when you actually eat it in Honduras. Honduran cream is what gives it the different flavor. Also chimol is not the same as pico de gallo. But i guess. It looks good.

You could probably have used the broth to "deglaze" the browned bits on the bottom of the inner pot more easily. Broth or wine are often used to deglaze the browned bits from a pan in stovetop cooking. Your method looks great otherwise. Just printed out the recipe from your website.
