    Thank you for this video! I am a beginner in fresh milled four and want to start with sourdough too. I started my first with all purpose and “ruined” it at our campground. Probably should have used bottled water but it petered out and I never started another. You successfully helped me feel like I can do this again - thank you for your encouragement that I can do it.       I've never seen it used in person, but if it works as well as videos show it could be nice. I've not seen a video with freshly milled flour though so I couldn't say for sure.

      You absolutely can, I feel it comes together better with hand kneading. For me the texture just ends up better but either way will get you great pasta

      Honestly any flour will make delicious pasta. I like a mix of kamut and soft white wheat berries best, but I've not tried everything.

    Is it one tablespoon of yeast or two the recipe says one but in the video you say two and what kind of yeast … is in instant or regular …. I’ve been making this with one tablespoon of instant and it doesn’t seem to rise like it should ….. I’m new to this so any info would be appreciated ❤

      Sorry for the confusion, I wrote Sue Beckers original recipe in the description box but in the video I doubled the recipe so I used 2 tablespoons. I use regular yeast not rapid rise.

    OHHHHH my word. I just made these they are fabulous. Better than store bought and they are all whole wheat. I used 100% hard white berries. The just taste soooo good. Mine didnt get the big crannys like yours tho. I didnt have any lecithin. Is that why or what did I do wrong. They rose up very nice and puffy. I was very careful to not degas them. But its fine.       Could be, it could be it's your first time making them. You get better every time you make them. Also don't cut them with a knife but pull them apart with a fork.

      Lecithin is an emulsifier, it breaks down fats and oils which makes softer bread. It helps the gluten by making it stronger so it can hold more gas and rise better. Because we use a heavier flour because it is filled with all of the goodness of the whole berry, we need all the help we can get to make our bread rise and be fluffy.

    Hi, I hope it is okay to ask a question here, I could not find an email address. I need more help with the mock mill, you have taken me so far and now I need more help. Would you please tell me what setting I use on the mock mill to get cracked wheat for cream of wheat and what setting for steel cut oats. I don't seem to be able to get them correct. Mockmill gives us so many settings, 30 and that is a lot to learn. Any help would be greatly appreciated. I miss your videos, I hope everything is okay. I will be praying for you.     Came here when researching Ankarsrum attachments and how they compete with Kitchen Aid and I appreciated you talking about mixing berries because a lot of people don't think about that. On our wheat farm our main bread and butter (pun intended) crop is western white which is 70% white, 30% club and it's a great mix. Are you happy with your Ankarsrum?

I only watch you and one other for baking with FMF as I'm new to it. For me I think it's all about the kneeding time and the feel of the dough.     Hi! I watched Sue’s video on how to make French bread with her recipe and I noticed you didn’t do her sponge method by only adding about half of the flour she called for and letting it sit for ten minutes before adding the rest and starting the kneading. I wonder if that would make a difference. I tried your recipe and it’s great. Following your method I too had to use extra flour. I’m going to try following her video next. And see if then it wouldn’t take so much extra flour.

      @ I followed her recipe yesterday, and I only needed a little less than 5 cups of flour! I also didn’t have to let it rise for an hour using the instant yeast. It was more of a quick bread so that was nice too. Check out her video of her and her son David making their French bread recipe! On another note, I love your videos!     Robin, thank you so much for making these videos, I love the way you explain things. If the wondermill cant mill dent corn for cream of wheat or corn bread, can I put it in a food processor to get the coarse mill? I am trying to decide which mill I want the wondermill or the Mockmill 200. I don't make a lot of cornbread but absolutely love cream of wheat for brkfst. I have a kitchen aid food processor and am hoping I can get a coarse grind with it.

      @@realfoodgoodfood I apologize if I am asking to many questions from you regarding flour mills, it's just that we have absolutely no one here in my area that mills their own flour so subsequently I have to look on TH-cam and find someone I can learn from. "Tag your it"! 😀. I am watching the Sue Becker videos as well. Robin, have you ever considered having a weekend get together in your area for some of the people that love learning from you? You don't have to be a professional, I go to lots of sewing and quilting things that are just people willing to share what they have learned. If you ever decide to do something like that please let me know. As I said, we have no one in our area that mills their own flour or even sells flour mills and I'm very very hands on. If I could just get a full day with hands on I'd be good, I'm a quick learner. I would definitely travel to learn the art of milling flour and baking with it.     is it possible to add the weight by grams for both the starter, flour, water and salt. I always go by weight because weight changes by gr to cups. I also appreciate that you use the ankushrum?? as I bought one and have not used it yet.

      You're going to love your Ankarsrum!! What color did you get? I usually don't say measurements in weight because people take it as law and will only add that much and as you know baking at different times of year with different humidity and such really affects the weight you need to add. I'd rather give you the idea but show you what it should look like so you know what to aim for. But maybe I should add weights and just say you may need to add more?

    Can hard red wheat berries used for this recipe ? I just ordered hard red wheat berries for breads and soft white berries for cakes, pastries and cookies... I hope that's right. I'm just learning about milling my own flour. Also if your mockmill can go from coarse to find why did you purchase the wondermill... I'm just curious. Thank you for doing TH-cam Dee

      Hi Dee, hard red berries are wonderful for sourdough, I use them often! I originally bought a mockmill when I first started milling and I love it. I use it every single week I wouldn’t give it up for the world! After I saw amazing results in the health of myself and my children using freshly milled flour I started to tell my mom about it, turned her on to Sue Becker’s videos, she witnessed the improvement in my family’s health and said “sign me up too!” We took a class together at Breadbeckers in GA. She decided to buy a mill, they had a nutramill or wondermill she picked wondermill. She was asking me how to use it and I said I didn’t have one, I had a stone mill. So she bought me a wondermill with the instruction that I had to figure it out so I could teach her haha! So I am blessed with two mills. I use the wonder mill when I need to mill large quantities of grain because it is faster, and the mockmill for absolutely everything else.

      Thank you so much, I’m happy to help! My name is Robyn. I have a video about the mills but I can say I love both they each have helpful features. If speed in milling is most important to you I would go with wondermill. It is amazingly fine flour, I can’t complain about any part of it. I prefer the Mockmill because it can mill more things. I love cornbread and grits and you can’t mill grits in the wondermill, you can only get one fineness out of it. The mockmill can crack peppercorn and other spices also, I like to barely crack open millet for my oatmeal. My only complaint is it is slower. I have the 200 model, there is a professional model that is much faster but at a much higher price range. In the end the speed is not a problem really. I hope that helps!

    One more thing I recently discovered with fresh milled wheat you can autoleyse (sp) for hours (overnight) add the starter in the morning. You will be amazed at how the dough feels the next morning!

      When you do this do you autolyse with water or milk? I’ve heard milk makes a softer bread but not sure it should sit out all night. Just curious bc I really want to try.

    Autolyse is wheat and water only; fermentalyse is when it has the starter

    Oh wanna have some fun probably and interesting thing to teach your kids since you home school 🎉 look up food geek and apple leaven. Yes you can use it to make fermented bread like sourdough method , but tastes less sour. He was even surprised at how well it rose. Check it out!!

    I don’t understand how you got sourdough to double in an hour. Takes me 4 in my proofing box set at 86 degrees! I then shape and put in the banneton for an hour so the. The fridge over night. Would love to know why it’s doubling that fast.

      Wait! I know why. You used 300+ grams of starter for one loaf! The more starter the faster it ferments. I use 100g grams for 450g of flour

      When you need a loaf fast! I have other recipes that call for less sourdough starter for longer proofing time for a more sour flavor. I love baking, you can find something for all your needs!

    I bought the pasta roller for my Elektrolux Assistant, the predecessor of Ankarsrum. Ankarsrum is not effective for doughs with low hydration, which I work around by adding the last flour at the end of the kneading, or by kneading the last flour in on the counter. I saw in a video that if you run the dough through a few times before turning to a smaller thickness, you achieve the same as standing and kneading by hand for a long time. It also warms up the dough a little like with your hands. I don't know if that's right. I have not bought the various other pasta dough rolls for the same reason you mention.

    Is there special experience in mixing soft white wheat with kamut, or can you use pasta dough made from pure kamut. I have tried making pasta dough from both kamut and spelt, separately. Spelt alone cracks. We have weaker wheat varieties in Denmark, especially the old varieties and the newer bread wheat, which has been refined away from good baking properties against several tons/Ha

      It is just a combination I prefer, I get a good pasta with a nice texture. I have not tried 100% kamut. I know people who use Ezekiel bread flour for pasta, I think you keep experimenting until you find something you like.
