I bought the pasta roller for my Elektrolux Assistant, the predecessor of Ankarsrum. Ankarsrum is not effective for doughs with low hydration, which I work around by adding the last flour at the end of the kneading, or by kneading the last flour in on the counter. I saw in a video that if you run the dough through a few times before turning to a smaller thickness, you achieve the same as standing and kneading by hand for a long time. It also warms up the dough a little like with your hands. I don't know if that's right. I have not bought the various other pasta dough rolls for the same reason you mention.

Oh! And I just bought an Ankarsrum mixer and Mockmill in March and God has lead me to freshly milled flour in January. I never considered myself a cook or baker , but a whole new world has been opened to me. I’m so excited to have found you who uses the same kind of equipment. 🎉
@realfoodgoodfood I wanted a flaker, but the LORD led me to the pasta maker, (He's so thoughtful)...And the grains can be sprouted and wet, served shortly afterwards-- win, win!

@@realfoodgoodfood I'm back! 😆you know when dealing with flour, your humidity play a roll in your dough. The next time you make pasta, I'm curious as to the weight of your eggs- in grams. I just used 7 eggs and yeah, I think mine may have been bigger because, it never came together. Even after trying to hand knead, the ball kept sticking to my hand. 😂I had to add a couple of TBS of flour just to be able to knead it into a sticky blob.
Oh no! I'm so sorry! It's so hard to give exact measurements in a video like that, I can at least show what it should look like in the end. Sorry for the frustration. Were you able to use it for pasta?
Is there special experience in mixing soft white wheat with kamut, or can you use pasta dough made from pure kamut. I have tried making pasta dough from both kamut and spelt, separately. Spelt alone cracks. We have weaker wheat varieties in Denmark, especially the old varieties and the newer bread wheat, which has been refined away from good baking properties against several tons/Ha
It is just a combination I prefer, I get a good pasta with a nice texture. I have not tried 100% kamut. I know people who use Ezekiel bread flour for pasta, I think you keep experimenting until you find something you like.
Thank you! I boil my lasagna noodles a few at a time for 3-4 mins then layer on the lasagna and they finish baking in the oven. They taste amazing! When I tried to boil many noodles at once they ended up sticking together.
I start it there to get the really sticky and messy part mixed, however, I feel you get better results in the pasta if you knead it by hand, somehow the texture is better.
I've never seen it used in person, but if it works as well as videos show it could be nice. I've not seen a video with freshly milled flour though so I couldn't say for sure.

Thank you! It's such a small amount I feel the mixer doesn't do it as well. I think the heat from my hands helps it also.
If you made a double batch, would you use the mixer for the entire knead?

I don't have the Ank pasta attachments, they cost more than I was able to spend so I bought a Marcato pasta maker. I have a video on that though!
I can look forward to making some of this pasta! I recently used my pasta roller to make rolled oats from my wheat berries, and it was fantastic!

For pasta you want it as fine as you can get it. You will love the taste and texture of hand made pasta!

Could you not have let it knead longer in the machine?
You absolutely can, I feel it comes together better with hand kneading. For me the texture just ends up better but either way will get you great pasta

So what flours work best for pasta? I bought some Durum berries… I have never tried kamut, I use hard red mostly
Honestly any flour will make delicious pasta. I like a mix of kamut and soft white wheat berries best, but I've not tried everything.
How do you about the Phillips 7000 pasta maker?
