I did the best I could and I'm definitely not looking for anything close to zero. 90% of the time I stop at the 1k stone. But I was curious to see the results using these stones that I generally use for polishing. Trust me, after the 12k stone, it's scary how sharp it is. I can't wait to lose that edge after just 2 minutes while preparing dinner tonight 😉

That's it, the polishing project is now complete! I installed the handle last night and now this gyuto is ready to be sharpened, I will start using it tonight. It's more than pleasant to work with a honyaki blade and it's by far what I love doing the most now. Bonjour beau travail. Belle video.dommage que vous n inscrivez pas bicarbonate et les grains pierres et tout autre article japonais utilisé au fur a mesure .pour aider les débutants a ce lancer dans cette art.merci

Astonishing channel had I stumbled into! Keep it going m8! I just started sharpening and having 2 main problems that I want to ask about: - I am having a difficulty maintaining the angle of sharpening when doing it on the left side of the knife with your handling style (My right hand is the one holding the knife). How did you managed to do it? I always get wobbly when sharpening near the handle of the knife with that handling style. -Moreover, even when I only apply pressure when pulling the blade away to prevent from digging into the stone, I always felt some kind of jaggy sensation and it does not feel as smooth as simply sharpening on the knife's right side. I ended up so frustrated that I simply held the knife with my left hand and mirrored the action to be able to sharpen the knife's left side, but that makes deburring time a pain in the *ss. -An additional question is how did you "determine" the angle of sharpening to match the "already-there" angle on the blade? Are there any tricks? Hoping to get some guidance from you! Thanks in advance :D
@@lamkhangnguyenduy5250 Thank you for your comment and for your kind words. For your left side, I'd say it's a matter of practice. My wrist is stable and I don't move at all, like the right side. If you are able to sharpen with your left hand then that is also good. For deburring, you can use only your right hand and make first strokes. It shouldn't be more difficult. For the jaggy sensation I don't know why. Both sides should feel the same. maybe you are due to resurface the stone? For the angle, it is generally 15~18° for a Japanese knife and 20~22° for a European knife. You can start near the heel at an angle and see the result. Don't put too much emphasis on the angle. Choose the appropriate angle and keep that angle throughout your sharpening. The most important thing is to have the knife at its apex and deburring the right way to achieve a nice cutting edge. I will make a tutorial video about my sharpening technique soon, maybe you can find a thing or two there to help you.
Hi there, after resurfacing the stone it has been way more enjoyable sharpening the knife as you told. Another problem that popped up is that there seems to be a burr apparent on the blade no matter how many light - alternating leading strokes I did on the knife. I did a total 30 passes on each side and more (I stopped counting after that lmao), and still having a very light burr on the edge no matter how long the deburring process is. Can you elaborate more on your deburring process? I don't have a leather stop yet :B
@@lamkhangnguyenduy5250 deburring is the most important thing in sharpening and it can be painful at first. The more passes you make, the more likely it is that the angle variation will move your apex. For deburring I only do 6 passes, leading stroke. You can also use a cork or other material to remove the burr if it's still attached. Then you can go with your strop to clean your apex. On the leather you should not put a lot of pressure (usually the weight of the knife) so as not to roll the edge.

It is an amazing video! I always have to go back to a 220 JIS grit stone to get a burr. Then I have to go all the way through the whole Chosera series up to 5000 and then Diamond strop 1 Micron. And after the 1 Micron strop it shaves. Never earlier. Could you tell me please if you get a burr from the Chosera 1000 and how you get it? It is at the moment impossible for me. Best Regards

Salut Julien, Je comprend pas le phénomène ou jai plus de mordant sur mon couteau acier 440c avec une pierre glass stone 1000 , qu'avec une 3000-5000
C'est normal car le grain est plus grossier sur la pierre 1k qu'avec une 5k. Tu vas avoir plus de dents, donc plus de mordant. C'est une question de préférence à savoir sur quelle pierre tu veux terminer!
@ humm ok , merci je vois tout a fait, je vais pencher sur du 3000 pour ce couteau alors ! , mon sakai en acier gisang est aiguiser a 15.000 , il a un bon mordant ! Je pense que cest la qualité de lacier qui joue aussi

Perfect Julien 💪 I use a honing rod a while now and it is perfect for some steel. Up to about 61-62HRC steel's it is a perfect addition. Do it frequently and you don't need any stones for a long long time. A few strokes here and there and you'll be ready for everything. Pretty cool 💪
Thanks man! I always use mine on my honyaki gyuto Sheffcut (66hrc) and the ceramic rod never failed me. I've made this video to help my customers to do it the right way 🙂

Slt , il y a un truc que j ai du mal a comprendre . Il me semblait qu en montant dans les grains en finition , l on diminuait les dents causés par l affutage et que du coup on rallongeais sa durée de coupe nn ?
Pas du tout, cela va venir fragiliser le tranchant , il coupera mieux mais seras plus fragile, donc demanderas un entretien plus poussée. Je monte à 12.000 - 15.000k sur mes couteau, mais vaut mieux avoir un acier dur .

@@souleydeflo9304 pas du tout, une plaque 140 me dure environ un an. Je l'utilise à chaque jour pour aplanir mes pierres et pour faire des petites réparations comme celle-ci.
Why form another burr on the 5k stone if you already apexed the edge? I always thought you formed the burr just once then refined the edge on finer stones. hmm.

Merci à toi, Julien ! En fait, je suis un profane… J'ai guise avec un système guidé… On ne peut pas être tous parfait… Ah ah, ah ! Il y a un truc que je ne comprends pas. Tu montres qu'il faut aplanir le tranchant avec une Pierre 140. Et qu'il est inutile de se servir de Pierre à grain très fin si les fondations avec la pierre grossière ne sont pas acquises. C'est à contresens de ce que j'ai compris de la vidéo… En tout cas, merci beaucoup à vous de consacrer du temps à des personnes comme moi. Bien à toi.@
