    Hi Lizi! This video is SO SO helpful to watch again after making your bread this past year. I watched it when I first bought your book and I'm watching again today to brush up on tips from you! Ok I have two questions: first is, I want to know if I can double or even triple a batch if I have a big enough bowl, or will it compromise the end result? I ask because I am making a lot for Christmas gifts and if I can save some time by doubling or tripling batch I am going to. Second question is, if I can double or triple, that will mean half of my dough will need to wait a little longer to go into the pans and rise etc. because there is only so much room in my oven. Is that longer wait time for the dough to be divided up into pans going to compromise the end result? Thank you for everything! Your bread has been miraculous for my family as there are gluten intolerances but they can eat this bread. ❤

      Thank you so much! I love this! You will want to work backwards from how many pans you have available because the bread will rise quickly so I wouldn’t mix up any more than you can bake at once. Happy Baking!! 🍞

      Yes, look for the best tasting salt you have. We love the flavor and crunch of French salt. 😊😊

      In my Sourdough Discard book, we use 3/4 c powdered sugar for the dough and 2 cups powdered sugar in the glaze ❤️

    Lizzie, I bought your Kamut, made your mini loaves. They were cute & delicious but then I made my normal Dutch oven bread & it turned out flat. I did the exact measurements as my King Arthur flour which I make every week. Can you please do an episode on kamut dutch oven bread for me? I love your kamut but I also love my Dutch oven bread, many thanks, ❤

    When I first saw The Food Nanny all those years ago (10-15?)on BYUtv, her message was infectious. My children were very small then and we were struggling. Her message helped me see the ”big picture” of what I wanted us to be in the future. It is more than a simple meal plan that kept me organized and saving money, it was a blueprint for family togetherness that we established early. Kids are now grown and in their teens and twenties and they still know dinner is always on the table every night and all are welcome ❤ Love You Liz Edmunds and Lizi Heaps!!!     I have been using my minis ALOT! So fun and they bake perfectly! BTW, Have you baked bread in a Pain de Mie style/pan with Kamut? Should I just use the “basic bread” recipe for my pain de mie pan?

    Wonderful! So happy for this family from Clovis, New Mexico (I lived there for several years). I’m still in NM as well and have been using FN Kamut for several years now and have introduced it to others. Despite my wheat sensitivity I do fine with the Kamut and especially with the sourdough.       You can adjust your moisture level when you add the flour at the kneading step. Also, your oven could need to go up just a bit since every oven is different. Keep baking! You'll finesse it to what you like and remember that the weather can affect it also. <3

    is it okay to use thermometer to see if bread is done 190 200 done? cause my bread was doughy 😭

      I'd try turning up your oven first and really check the bottoms to see if they are browned before removing them. :)

      @@thefoodnanny they were so perfect till i took them out, the bottoms were not brown at all, but 3 of them were and they were ok, they were ones in back of oven so next time i will rotate and check bottoms, ty for responding :)

    I have been baking rye bread since the 80s. Since twelve or thirteen years ago I have been grinding grain in a Hawos Billy 200 and strive to bake and eat 100% whole grain flour. In my search on TH-cam, many posts come up, but unfortunately many do not describe what flour they are baking with. Many bake with all purpose flour and it is not 100% whole grain. Maybe they are not completely aware of it, but if some bran and germ are sifted out, it is no longer 100% whole grain flour. Lately I have been interested in kamut and einkorn and am trying to learn from other people's experiences, so searches may be in vain. Some may think that just because you bake with all all purpose flour, or sourdough, it is whole grain. It may say 100% einkorn or 100% sourdough or 100% organic, so there is a lot to consider, but 100% whole grain is ground grain, where everything in the grains is in the flour. Nothing is sifted out.       Thank you! You are right!! We have been harvesting Kamut with the partnership of these farmers for a few years and so we wanted to provide you with 3 options to enjoy it. First: the WHITE Kamut that my mom discovered in Italy. For better gut health, many Italians switched to the white (no bran) Kamut flour for making pizzas, breads and pastas. Second: Whole Wheat Kamut flour ground at our partners' mill and bagged directly for your baking and Third: The whole Kamut wheat berries, bagged up and available for you to grind FRESH at home for the very freshest of whole wheat flours.     Pumpkin Coffee Cake RECIPE HERE ✨🫶🏻🎃 Thanks to a really healthy Fannie she made this recipe for us 🙌🏻 @mmpickett This is for all your health nuts out there 😜 for me this recipe is better with sugar instead of honey 🍯 ! *This cake for sure is better cooled Cake Ingredients • 2 cups whole grain flour Kamut or White Kamut • 1 cup oats • 2 tsp. baking powder • 2 tsp. baking soda • 1½ tsp. cinnamon • ½ tsp. ground nutmeg • ½ tsp. allspice • ¼ tsp. cardamom (optional) • ½ tsp. ground cloves • ½ cup avocado or 😈melted butter • 1¼ cups honey or 😈 sugar • 3 eggs • 1½ tsp. vanilla • 2 cups canned pumpkin • 1/3 cup discard or can do without .. it’s better with ✨ Crumble Topping • ½ cup coconut sugar or 😈 brown sugar • ½ cup coconut oil or 😈 butter • ½ cup whole wheat Kamut or white Kamut • ½ cup oats • 2 tsp. cinnamon Directions 1. Mix dry cake ingredients together and then mix in the wet ingredients until just combined. 2. Pour the batter into a greased 9x13 pan. 3. Mix the dry topping ingredients together and cut in the coconut oil or butter to form crumbles. Sprinkle over the cake. 4. Bake in a 350 degree oven for 25-30 minutes or until done in the middle. Glaze 2 cups powder sugar 5 tablespoons milk 1 teaspoon vanilla extract Drizzle all over warm cake and enjoy 😋
