Making Garlicky Hasselback Sweet Potatoes (New York Times Recipe)
In this video, I make hasselback potatoes for the first time, using The New York Times' Garlicky Hasselback Sweet Potatoes recipe. Hasselbacking is a method of cutting the potatoes into thin, accordion-like slices, so that when you cook them in butter or garlic or whatever, it really absorbs all the flavor. The presentation is also satisfying. Some mistakes were made. Overall they came out delicious.

I found this video from googling oven baked tofu after a truly disastrous air fryer experiment. Love the video and the whole vibe❤. I’m going to try recipe 3 with potato starch and use a baking rack so the bottom cooks at the same time as the top.

@XtineCuisine, see, I used to buy pre-packaged, shrink-wrapped "fried tofu," which I used in an amazing Vegan stew. I can't find it now, but the reason I loved it was that it was chewy. I find fake meats and tofu tend to go to mush if you try to cook them in a way that gets them to take on flavour as they cook. Not so for that kind I used to get. That said, it is possible the first method, which you found lacking, might be just the thing for recipes with longer cooking times than just tossing in at the last few minutes. I wish I knew the method Mandarin House, which used to be in Knoxville, TN, used. For their lunch buffet, they had a sweet and sour tofu dish, with sliced carrot, onion, and mushroom. I used to get that over their fried rice, along side mushroom and broccoli tempura and two spring rolls, all drizzled with red duck sauce, plus sauteed greenbeans. I had no problem being satisfied there, and the food I was eating (when I was just vegetarian) was always almost all Vegan. Sometimes I did get the cheesy potato puffs, or mozzarella sticks, but usually not. The prior were a bit greasy, and the latter tended to dry out and get hard. Anyway, it was good seeing this comparison. I might try variations on this theme, and use the air fryer. I like to use Tiger Seasoning, as it has white pepper, granulated garlic, powdered onion, salt, MSG, and dextrose, not in that order. Maybe I will revisit my stew. It had potato, turnip, black olives, mushrooms, carrots, onions, garlic, fried tofu, and seasonings. Probably salt, pepper, sage and thyme. I forget the details, but I wrote it down. I used to use that to break my once a month Full Moon fast. I follow a lot of other YT Vegan chefs/cooks. If you want to see some of the better, not always the most popular, feel free to look at my YT channel's saved videos under "Recipes." Not all the recipes are Vegan, but I saved ones I think could be turned. I wish you success in your new endeavor.

This is late, but I was confirming the recipe (got paywalled) and wanted to mention that another reason you might not be getting great final coverage of your powdered sugar is strictly due to a lack of surface area. You roll them up, which does make them more uniform and maybe even easier to handle, but I would guess allowing them to be a bit messier will allow for a lot more thorough coverage of sugar and will still yield a very similar looking cookie once baked. Just a thought - nice work! :)
