How We Harvested Our Olives This Year - Off Grid Italy

The olive harvest is a time-honored tradition that marks the culmination of a year's work in the olive groves. Typically taking place from late fall to early winter, the harvest period varies depending on the region and the type of olives being grown. The timing of the harvest is crucial, as it determines the flavor and quality of the olive oil.
Olive Picking can be done in several ways:
Manual Picking: Traditionally, olives were harvested by hand, which is still common in smaller orchards or areas where the terrain is difficult. Workers carefully pick the ripe olives from the trees, ensuring they don’t damage the fruit or the tree itself. This method is labor-intensive but allows for a more selective harvest, as only the best olives are chosen.
Mechanical Harvesting: In larger commercial orchards, mechanical harvesters are used. These machines vibrate the branches, shaking the olives loose and collecting them as they fall. While this method is much faster, it can cause some bruising to the olives, which may impact the quality of the olive oil.
Raking or Shaking: In some cases, workers use tools like rakes to gently comb through the branches, coaxing the olives to fall into nets or onto tarps spread out below the tree.
Olives are harvested when they reach their peak ripeness, usually indicated by a change in color from green to purple or black. The timing of the harvest can affect the flavor of the oil: early-harvested olives tend to produce oil with a more robust, peppery taste, while later-harvested olives result in a milder, fruitier oil.
Olive Oil Production
Once the olives are harvested, they are taken to the mill for processing. The sooner the olives are milled after picking, the better the quality of the olive oil, as oxidation can degrade the taste and nutritional value of the oil.
Washing and Sorting: The olives are cleaned to remove any leaves, twigs, or dirt. Only ripe, healthy olives are used to make the best oil.
Crushing: The olives are crushed into a paste, traditionally using large stone mills, although modern mills may use stainless steel crushers. This process helps release the oil from the flesh of the olives.
Malaxing: The paste is gently stirred in a process called malaxing. This step allows the small oil droplets to combine into larger ones, making it easier to extract the oil.
Pressing or Centrifuging: After malaxing, the paste is either pressed (in traditional methods) or spun in a centrifuge (modern method) to separate the oil from the solid matter and water. The resulting oil is known as extra virgin olive oil if it meets certain standards for purity and acidity.
Filtering and Bottling: The oil may be filtered to remove any remaining solids, and then it is bottled. Extra virgin olive oil is typically stored in dark glass bottles or tins to protect it from light and maintain its freshness.
The resulting olive oil is prized for its rich, fruity flavor, low acidity, and numerous health benefits, including being a source of healthy monounsaturated fats, antioxidants, and anti-inflammatory compounds.

I was huffing and puffing and getting back ache just watching you harvesting those olives! I think that the first and last time I tried that was some 20 years ago and it almost killed me! Always relied on our excellent Albanian and Romanian workers since then, and we pay them a percentage of the crop, not cash, then we do the same with the olive press. They keep a percentage of the oil, rather than being paid! It's a less stressful system all around and ensures that people work to get every last olive off the trees and squeeze every last drop out of the olives at the mill!
Yeah it is back breaking to say the least. Didn’t help that we had hauled 20 solar panels onto the roof just before doing this job. 🤣 I think we need to see if we can get a similar arrangement to you for future harvest. 👍🏻

i recently bought 2 one liter cans of EVOO and paid just over 68$ total and it was not considered top drawer. now i know why it is so valued, a lot of work goes into that oil.......

@@FarmsVilla I suppose it depends on how much energy you use on the hungriest day. I’m still grid tied and we use a lot of energy (40kWh on average daily) so 3 is OK. Remember you can’t use the full 16kWh per pack. It’s more like 13kWh, so 3 batteries is 40kWh useable.
@ yeah we got used to using a lot less power when we went fully off grid 2 years ago. Mandy actually uses the oven after dark now since this upgrade! 🤣 during summer we could use up to 40kwh per day if we had a lot of sun.

Thanks Arnold. Yeah I went over how I was going to do it several times in my head before landing on the way I did it. It involved a fair bit of head scratching it has to be said. I will be stripping the old inverters down to give them a deep clean as they are covered in dust before doing the rebuild. Still scratching my head on exactly how I am going to do that one. 👍🏻

Harvesting a few hundred olive trees in Kalamata, the home of the world's best olives, I was interested to see what you're doing in Italy....... In the spirit of being a helpful neighbour, may I suggest a few things which I hope you'll find useful? 1) You were looking to harvest your olives right at the end of October, which just seemed too early? Our early crop, which will give us slightly less oil is harvested around late November, early December and the 'normal' crops will be around mid to late December through to early January. I might harvest around a third of the trees in late November and those I'll generally have 'cold pressed'. All of which gives me a stronger flavour with deeper texture, although I'll end up with less oil per tree, because of the early harvest and 'cold pressing'. ....... One of the things some local harvesters do, is to persuade those who aren't too experienced to harvest early, as they know that they'll be busy in the 'normal' harvesting season and don't want to lose your business..... but it's important that you're firm with when YOU want the harvesters, as the general rule is that the later harvest gives more oil..... 2) I don't know who you use to prune your trees, but they look quite out of shape and even sapped of energy. One of the big reasons for this is you seemed to have an awful lot of very well developed 'suckers' growing, particularly around the base, where you were struggling to cut them as they were too thick! All that saps energy away from where it should be going and you end up with smaller olives and far less olives, as a result of the many suckers and bad pruning! As a rule of thumb with your size trees, you should expect around 50kg plus of olives per tree. I aim for 50kgs to 100kgs per tree, depending on the size of the tree. 3) You say that you only undertake a 'hard' pruning every 4 years? The reality is that it should be every 2 years! With the softer pruning every year, but still quite rigerous. The pruning is very important and I find that contracting out the pruning to the real experts is well worth the money spent! Though I've found an excellent pruner with a team who also does my harvesting for me, all in one! 4) With all those old branches and cuttings around the place under the trees, with much of it having been there since your last hard pruning nearly 4 years ago from what you say, it can cause a build up of pests which will affect your harvest and can even stunt your tree development. Have a little 'well' to hold any water around the base of your trees and keep the area under each tree clear. Depending on your type of soil, decide what sort of cover crops you might want throughout the year under the trees, Ideally let the cover crop die off at the end of the year, but don't take it away, and you can just put your harvesting nets over the cover crop, but it'll die and feed your soil, as well as keeping it aerated. It's good to have the soil around your trees analysed to find what it needs, so that you can choose the appropriate cover crop. That's just a few of the basics which sprung to mind as I watched your video.... I hope that you find this helpful and accept it in the spirit of 'helpfulness' in which it's intended. Wow! Thanks Paul we certainly do take this in the spirit of helpfulness so thanks again! 😊 Plus we are both thick skinned anyway. 🤣 1. Harvesting time is largely dictated by when I (Clive) am home which is usually every 4th week. I will be away for 6 weeks from the 10th Nov due to work pressures. Only returning on the 20th Dec and jetting off again on 6th Jan. You are correct that ideally we would have only harvested the first crop around the start of Dec. We also keep an eye on the amount of olives dropping. This year for some reason the olives were dropping a lot sooner. As we harvest using nets hoping for extra extra virgin oil we had no choice but to harvest now. Watch out for Mandy's next video about the harvesting of the Olives and I think you will see why we figured now was as good a time as any to grab them while we could. 2. The trees were all pruned by our local expert who is also a very nice guy and knows what he is doing in Feb this year. They were well pruned but sadly with me being away all the time it is impossible for Mandy to manage all the trees on her own. I agree with you on the 2 year hard prune rule. This has led to some severe "discussion" between Mandy and I over the last few days is all I will say. 😏 Once pruned they need to be maintained to keep their shape but without regular maintenance it all tends to go Pete Tong very quickly. 4. Thankfully we cleared the last pruning away a bit quicker than this year's prune. We have just got tier 2 to finish clearing now therefore we only did a hand pick exercise up there this year. I was planning on coming up with an ingenious plan to put drippers on each tree. Where we have trees that get watered regularly by the lawn sprinklers they produce more and bigger olives than the trees that don't get watered regularly. Oh and if you like the salty delicious Italian olives that look a bit shriveled up just pack the cleaned and dry olives in salt. Shake them daily for about a month. Once the bitterness is gone rinse, dry and store in olive oil. You can add garlic and herbs too. They are so delicious. 😋

You are way better than me - this was always Batman's job till he went off to the UK. We can't find rooting powder here in Portugal. Tried asking in one of our earlier videos and we were kindly told we should do it the Portuguese way with aloe or cinnamon. Definitely doesn't work like the rooting powder does! Great winter garden prep guys! ❤

@FarmsVilla We've bought and used rooting powder before, should be able to find it easily in Canada. Grant did a fantastic job on the stone work for our fireplace. We sat and enjoyed a cozy fire last night. Hopefully we're able to go home for Christmas, but not sure yet. We missed my Dad's 80th Birthday so we're overdue for a visit.
I agree Grant did do a sterling job with the stone work and the fire place looks fantastic. Definitely going to be very cozy and warm as the winter approaches. I hope you can convince Batman that it is not that difficult to install a fireplace - I have watched some you tubers do it in an hour 😂🤣. I really hope you make it home soon, 80th birthday is very special and sad that you missed it. My mom turned 84 this year and I can only hope that I am as fit as her when I grow up lol.

That’s what I thought as well. When I unpacked the cells I measured them and they were all within 1 mv of each other. 👍🏻
Now a 15kwh battery even cheaper. Reasonable price only based on the time you making the purchase
I was happy with the price. Having to put it together myself was no issue. Will be looking to get another 2 of them once the whole system is upgraded. Maybe I can get the next 2 even cheaper. 😊

little crucial tip for you, regarding your COM port 4, right click on it and on the pop up box that appears click on "power management" (the last tab in the list), make 100% sure the box that says"allow the computer to off this device to save power" is NOT ticked otherwise the port will go to sleep especially with a laptop it is a windows trick, also make sure you have a copy the seplos drivers to hand ,as microsoft i have known to overide non windows COM port drivers after doing a update, this will undoubtally save the hair you have not got to pull out :)

As far as the washers go on the LiFePO4 cells - theoretically they do add resistance, but it is (my POV) negligible. Was more concerned that you didn't torque the nuts on the busbars, but as long as you were consistent with ALL of them - then I suppose it's fine! I can tell you this upfront - it's gonna be a *lekker feeling* if you are COMPLETELY OFF-GRID with ample power when you need it !
