Purple Sweet Potato & Coconut Snowskin Mooncake Recipe 🥮 🍠 🥥
Celebrate Mid-Autumn Festival with “Purple Sweet Potato & Coconut Snowskin Mooncakes”! 🥮 This year, I wanted to make a healthier mooncake, so I opted for purple sweet potatoes! 🍠 Their vibrant purple color is so gorgeous, and since they’re naturally sweetened, I didn’t add any sugar aside from sweetened condensed milk. Also, instead of using neutral oil, I substituted it with coconut oil and added coconut milk to amplify the coconut flavor, which paired really well with the sweet potato. ☺️ I hope you enjoy this recipe! For those who aren’t familiar with the Mid-Autumn Festival, this is a popular Chinese holiday that falls on the 15th day of the 8th month on the lunar calendar when the moon is at its fullest 🌕. The history of this festival dates back over 3,000 years to thank the gods and the moon for a good harvest. To celebrate, families reunite and enjoy a big feast together (similar to Thanksgiving in the United States). Lanterns are lit up to symbolize prosperity, and mooncakes are eaten to honor the moon. 🥮
⭐️ Snowskin Ingredients: [This recipe makes 15 (53g) snowskin mooncakes]
* Glutinous Rice Flour- 3/4cup (80g) - amzn.to/3zezk9o
* Rice Flour - 3/4 cup (80g) - amzn.to/3MDegN3
* Wheat Starch - 3 tbsp (40g) - amzn.to/3Xonx0o
* Coconut Milk - 1 1/4 cups (28.5g)
* Coconut Oil - 2 tbsp (26g)
* Condensed Milk - 2 tbsp (38g)
* Milk - 1/2 cup (123g)
* Purple sweet potato liquid - (2 tbsp)
⭐️ Filling Ingredients:
* Japanese Purple Sweet Potatoes - about 4 small to medium sized (400g)
* Water - 1/4 cup (59g)
* Coconut Milk - 3/4 cup (171g)
* Condensed Milk - 1/4 cup (76g)
* Coconut Oil - 4 tbsp (57.2g) + 1.5 tbsp (21.4g) when cooking
* Milk - 1/4 cup (61.3g)
* Wheat Starch - 1/4 cup (130g) - amzn.to/3Xonx0o
* Salt (a pinch)
⭐️ Dusting Powder: (keep to prevent the mooncake from sticking to the mold)
* Glutinous Rice Flour - 1 tbsp (7g) - amzn.to/3zezk9o
💗Storage: they are best eaten fresh! But you can store them in the refrigerator in an airtight container up to a week. When you’re ready to eat, take then out to thaw in room temperature for 20 mins or until they have soften.

My husband is allergic to wheat, what could I substitute wheat starch? Xanthan Gum? Potato flour? . Thank you
You can substitute wheat starch with corn starch or tapioca starch however it will change the texture & appearance. Corn starch will make the skin firmer and tapioca starch will make it chewier & elastic. Hope that helps!

You can if you can’t find wheat starch but it will make the skin firmer in texture

@@lolapop2010 A lil wrinkling is normal 😜creaming your butter with sugar to get air incorporated can help and also don’t use a super high temp. 350F is perfect.
