You Cannot Stop Eating This Delicious Lime Cheesecake With Vanilla
This no-bake Lime Cheesecake with Vanilla recipe is deliciously simple to make. The fresh and fragrant flavor of the lime makes this cheesecake supremely unique and irresistible.
INGREDIENTS: FOR THE CRUST
400g (14-oz) Crushed Digestive Biscuits or Graham Cracker Crumbs
150g (5.3-oz) Melted Unsalted Butter
1 tsp Vanilla Extract (Optional)
Non-Stick Springform Pan - 28cm (11-Inch)
INGREDIENTS: FOR THE FILLING:
500g (18-oz) Mascarpone Cheese or Cream Cheese, softened
2 cans Sweetened Condensed Milk (2x397g)
250ml (8.5 fl oz) Cold Heavy Cream
120ml (4 fl oz) Fresh Lime Juice
Grated Zest of 4 Limes
1 Vanilla Bean (Optional)

    First of all I’ve never seen so much stirring in a recipe before! That ground meat was a struggle to watch! And that serving you dished out was enough for 3 people! Yikes!! Also liked how it held its shape but at the same time it looked a little dry!

      No.. as bizarre as it sounds, you don't soak the rice! First of all (as in any cooking prep) make sure you have a kettle of boiled/hot water. Heat up the pan or pot that you will be cooking the rice in, add some oil heat at 100c until you see shimmer. Add x1 measure of dry rice (yep.. straight from the packet) to the pot, stir it about until it starts smelling nutty, then add x1.5 measure of recently boiled water from kettle.. (stand back as there will be steam!) put lid on pot, 100c for 12 mins. Easy as that! *measure: I find the ratio 2:3 works without fail

    Looks delicious but basmati rice should be kept in water for 30 mints or 1 hour atleast to give you real fragrance and taste.

    Bel how come your bechamel didn’t go lumpy after adding milk all at once? I thought you had to add the milk bit by bit ? X

      Hi Ann, When you add the flour to the butter, you must stir, stir, stir always and at a very low temperature, until it becomes a very creamy paste without lumps. Throughout the whole process, the secret is to always stir at a very low temperature.
