🍌Banana Bread recipe: (refined sugar free)
- 3 large ripe bananas
- 2 large eggs
- 60g melted coconut oil for a richer flavour)
- 60ml maple syrup (or honey if preferred)
- 1 tsp vanilla extract
- 250g plain flour
- 1.5 tsp baking soda
- 1.5 tsp baking powder
- 2 tsp ground cinnamon
- 0.5 tsp salt
- 80g dark chocolate chips (look for at least 70% cocoa content for less sugar)
- 30g chopped walnuts or pecans
Method:
- Preheat the oven to 180c and grease a 23x13 cm loaf pan.
- Mash the bananas in a large bowl.
- Add eggs, coconut oil, maple syrup (or honey), and vanilla. Mix well.
- Whisk the dry ingredients (flour, baking soda, baking powder, cinnamon, and salt) in a separate bowl.
- Combine wet and dry ingredients, then fold in chocolate chips and nuts.
- Pour the batter into the loaf pan and bake for 45-55 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
