Hi Jess - maybe it is a build up of static in your saxophone caused by the high-pressured airflow, although because it is naturally damp exhaled air that may earth the static to the instrument. Does it happen when you wear rubber-soled shoes? If so I wonder if playing barefoot would earth the instrument through you ...... although perhaps it wouldn't work if you are standing on carpet or on a wooden floor, and only if you stand in wet mud 🤣😂🤣

I guess your long hair when dry and in a dry atmosphere has been statically charged in the past. For the situation in your video, I suspect that if you could magically go back in time and run the video again and just use your hand instead of holding the saxophone, your hair would have moved towards your hand. The saxophone, being a good conductor of electricity was like a hand extension, I think - especially an unlacquered instrument! For more explanation of the static effect itself there are lots of hits on Google, some very scientific and some more practical. Keep up the fun videos!
