Welcome to Gulab Ka Kitchen! In this video, we’re making an exquisite Lucknawi Zafrani Chicken Pulao - a royal Indian rice dish rich in flavor and visually stunning. This aromatic pulao is infused with saffron and a blend of spices, perfect for special occasions or a comforting meal. Let’s dive into the recipe!
Ingredients:
- For the Chicken Marinade:
- 500 grams chicken, cut into pieces
- 1 cup yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- For the Pulao:
- 1 ½ cups basmati rice
- 2 tablespoons ghee (clarified butter) or oil
- 1 large onion, thinly sliced
- 2-3 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 large tomato, chopped
- 1 teaspoon cumin seeds
- 4-5 whole cloves
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 bay leaf
- ¼ teaspoon saffron strands (soaked in 2 tablespoons warm milk)
- 1 tablespoon biryani masala
- Fresh coriander leaves, chopped (for garnish)
- Fresh mint leaves, chopped (for garnish)
- Salt to taste
- 2 ½ cups water
Instructions:
1) Marinate the Chicken:
Combine chicken pieces with yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, and salt in a bowl. Mix well and let it marinate for at least 1 hour.
2) Prepare the Rice:
Rinse basmati rice under cold water until the water runs clear. Soak for 30 minutes, then drain.
3) Cook the Chicken:
Heat ghee or oil in a large pot. Add cumin seeds, cloves, cardamom pods, cinnamon sticks, and bay leaves. Sauté until fragrant. Add sliced onions and cook until golden brown. Stir in ginger-garlic paste and green chilies. Add tomatoes and cook until soft. Add the marinated chicken and cook until it’s almost done.
4) Add the Rice:
Layer the soaked rice over the chicken. Pour in the water, and add saffron milk, and biryani masala if using. Adjust salt to taste. Bring to a boil, then reduce heat to low, cover, and cook for 20-25 minutes or until rice is fully cooked and fluffy.
5) Garnish and Serve:
Gently fluff the rice with a fork. Garnish with fresh coriander and mint leaves. Serve hot with raita or a side salad.
