The fundamentals of "a food critics monolog" is to visit and review different kinds of restaurants across the globe, the focus will always be on the food, service and the ambience of restaurant. We are using a 100 point scale that starts on 50 with "poor" all the way up to "best in class" that would indicate the highest level of cooking of all the restaurants in the world.
My background to be able to do this in a qualitative manner is 25 years of working in the restaurant industry spanning from simpler outlets like small bistros to high end multi Michelin starred restaurants. Also, I have been working in various food academies teaching culinary arts with focus on sensorics, savory food, pastry, bakery & dining room service.
In addition to that I have visited many 1-2-3 Michelin star restaurants around the world as that is my hobby and I have learned a lot from those experiences
I welcome all of you to join this culinary journey.

WHY YOU SHOULD VISIT A BRASSERIE IN PARIS - Bofinger
Brasserie Bofinger is one of the oldest brasseries in Paris and one of the more charming ones according to me. It is so much more than the food when you visit a restaurant like this, its an experience in the Parisian restaurant scene. As always the scoring will be presented at the end of the video. Not some herbs, but exclusively tarragon. Île flottante is not meringue, it's poached (preferably in milk), not cooked in an oven.
Have been there a few times, always a pleasant experience. Not a tourist trap

Boston & pizza *DO NOT* go in the same sentence. Boston is garbage. The only good thing to come out of that city, is the band Unearth.
Reginas is the most hit and miss pizza ive had. Some days it tastes amazing. Some days its very mid
Go to Florina in Beacon Hill --much better in my opinion
The hype around pizzas is ridiculous,even the alleged neapolitan authentic ones are still rubbish,they only taste nice when you're drunk.

awesome, subbed! great review. i live in the us east coast so i primarily eat in nyc but im very interested in a visit to copenhagen! i eat at ilis (in brooklyn) quite often, in fact im going next tuesday. the owner previously worked at noma and i truly appreciate the food he and his team create. its phenomenal stuff! so im truly loving watching your channel to help plan my copenhagen trip.

@@afoodcriticsmonolog oh i most certainly will. food and travel are two things i absolutely do not mind spending on. oo and if you do come the city, you can also check out Saga. i went in july with some friends and we all decided it was so fantastic we are going back next week! its the only 2 star restaurant ive planned to revisit so soon. i believe its taking the reigns for nycs best fine dining experience. atomix is another must try if you like creative korean cuisine

The seafood starters looked great. The cheese cart I would want to runaway with. The pre-dessert lemon also hands down looked wonderful! Great vlog!
I do not think JJ is a 3 star restaurant. Last time my wife and I dined there, with JJ being in the kitchen, the food was not up to par, dry fish, over salted sauces, spotty service, etc... Even two stars is 2 too many! Not coming back.
Consistency is so important for a restaurant to be able to play in the top league - sorry your visit was not as good as mine was.
Nice video, but that's really overpriced. The starter looks like someone threw up on the plate, and the next is that god awful mayo style misunderstood Michelin wannabe food that you find in so many places who clearly aim for a star. Until this video I had a great impression of Bo Bech, but thanks for the review so I can avoid wasting time and money in that restaurant.
An excellent review. The food seems interesting and the prices aren’t out of line. One gentle critique though. You say the word “really” a lot, almost to the point of “drinking game” frequency. That said, another informative post.

I've seen and read many reviews on Le Bernardin. The food is staid and boring. Before you protest, I agree. Chefs do not have to reinvent the wheel. Chef's don't have to create the "new" for the sake of being new. What I mean by staid and boring is that this food is uninspiring, plus what critics at The New York Times and Michelin are served is not the same food as what paying customers are eating. How do I know? Because I know a chef who used to work there. I don't know who Eric Ripert is paying off at Michelin but Le Bernardin is not a 3 Michelin Star restaurant. It's good, solid French food, perhaps 1 Star. Stop with the bitching. A 1 Michelin Star restaurant is nothing to be ashamed about.
Our experience was not that great. wife is gluten free, first dish had obviously gluten, they forgot.. waiter poured a bunch of water next to the glass and walked off. we thought he is getting something to wipe up the puddle of water. nope... we had had to call someone.. food was ok of all the 6 dishes yhe only hoghlight was a tomatosalad, as the tomatos tastet amazing.

For me a rustic presentation is not a big problem if it doesn't affect the taste of the food - and here the taste was great 🙂
I work in an Italian restaurant as a head chef here .previously having been involved in find dining,Italian food is hard to make look good,as it's essentially what people will eat for dinner at home ,however I know the taste is not affected by presentation but here it doesn't look good

@@midnightfox6378 Yeah, I was expecting this restaurant to be in the ”Great” segment in my scoring with having the BIB status, but it ended up to be only ”Good” with 84 points on the food. Doesnt mean its bad, just not great 😊
I dont like anything here , I rather go to steak restaurant instead to eat at 2 stars Michelin. But your video is very educational. I know precisely that I wont spend my money on shits.
