My name is Peter Cheng and I'm a lawyer by profession and it was when I was at university (over 4 decades ago) that I realised that I couldn't cook anything! Not rice or even an egg!
At that point, I wished that I had paid more attention to my mum and dad cooking the dishes that I had taken for granted. I wished they had left me with some kind of instruction - a cookbook... this was well before youtube and even the internet.
And so began my culinary journey to re-learn recipes I should have already known and to master new cuisines that I could not have imagined in my childhood.
And now I have my own child and, luckily, he does love to eat (almost) everything. He is not very interested in cooking at the moment but maybe one day, he might what to re-create the dishes that he loved as a kid. If he does, I hope that this channel will be an invaluable resource for him.

Lion's Head Meatballs | Easy Chinese Pork Meatballs | 獅子頭
Lion's Head Meatballs are delicious savoury pork meatballs slowly stewed with vegetables until they are tender moist and light.
INGREDIENTS
01. 500 g minced pork
02. 1 egg white
03. 4 spring onion
04. 1 Chinese Leaf
05. 1 tbsp light soy sauce
06. 1 tbsp Shaoxing rice wine
07. 1 tbsp sesame oil
08. 2 tsp sugar
09. 600ml chicken stock
10. 1 tbsp cooking oil
11. 1 tbsp corn flour
12. 1 tsp grated ginger
They are called lion head meatballs because they resemble the stylised guardian lions you can find outside Chinese temples and other buildings.
There are lots of versions of this dish in China but my recipe is one of the easiest. Traditionally, the dish would have been made with half-fat to lean meat. The meatballs are stewed until the fat melts. 50% fat is probably not acceptable today for most home cooks but I would not recommend using meat with less than 20% fat.
Lion's head meatballs are often served during banquets such as for Chinese New Year but they are pretty easy to make at home, if you have time to stew. You can make the meatballs in advance and are ideal as an everyday - family meal, especially if you pair the meatballs with rice or noodles.

Hi, you can certainly do the same recipe with drumsticks and thigh, as I have done. Chicken breast may be more challenging because the white meat is not as good for a long braise.

I have a question. Why just the egg white? When I make my soup, I use the whole egg, cook up a whole chicken and use that. I also don't put corn in my soup

It’s also a matter of taste and preference… I always add corn in my chicken soup, and just egg white, the same way as this recipe.. But even with the whole egg will be great !!! Who can resist a yaaaamyyyyy chicken soup like this !! 😋😋
You don’t add corn. Then it’s not chicken and corn soup. Read the label🤔😳
