    Salt mixture: 1 tbsp sea salt 1/4 tsp white pepper 1/4 tsp black pepper 1/2 tsp Chinese five spice 1. Prepare the chicken. Get rid of feet and head. Cut off the backbone. Cut the middle and flatten it. 2. Rub half of the mixture to the inside of the chicken. 3. Rub 1 tbsp dark soysauce on the skin side. (Rub Xiaoshing wine on the inside). Tuck the wings underneath the back. 4. Refrigerate it uncovered for few hours/over night. 5. Take it out from fridge to room temperature. Pull the legs out. 6. Roast for 20 minutes at 215°C 7. Baste it with honey. 8. Put it back in the oven . 9. After 7 minutes, baste it with honey again. 10. After another 7 minutes, baste it with honey. 11. Put it back in the oven for another 7 minutes. 12. Take it out from the oven and let it rest.. Sauce: 2 garlic minced lemon juice from half of a lemon. 3 tbsp fish sauce. 1 tbsp chilisauce 1 tbsp sugar Mix all together.

    I have made this several times…. It’s always good even if you use a big chicken …. I just increase the salt and spices. Always tender with tasty skin . Excellent recipe

    Just tried this recipe. It is DELICOUS! My husband couldn’t stop eating. It is healthy, simple, and mind blowing good. I am never dousing my chicken in olive oil and butter and bacon again, this will without a doubt become the new staple in my house

      @@trongquan4074 : skin will be crispy because it is air dried the moisture out of skin by putting in the fridge UNCOVERED a overnight. Must bring chicken to room temp the next day before placing in PREHeated oven. Because it is spatchcocked , split in half , lots of air in the oven will move around the chicken to keep it crisp instead of moist. If it was baked whole , it will capture some of steam inside the cavity . That is why it was flatten chicken. Going to be making mine tomorrow for family dinner . The Honey brushed onto the skin is going to help Caramelize the skin . This is going to be YUMMM .
