Cherries & Meadowsweet - an Early Summer Dessert
Cherries and meadowsweet remind me of summer. Whenever it is the season I try to make something with these ingredients. Here's my recipe for meadowsweet-yogurt mousse to be served with cherries!
Meadowsweet Yogurt Mousse
- 300g Greek yogurt
- 300ml heavy cream
- meadowsweet flowers
- powdered sugar
Bring the cream to a simmer and add meadowsweet flowers. Let infuse for up to 30 minutes and pass it through a sieve. Mix in the yogurt and add powdered sugar. Pour into a whipping cream siphon bottle and let it cool in a fridge. Add 1 cartridge of gas and shake well.
Honeycomb Toffee
- 200g sugar
- 100g honey
- 2 tsp baking soda
- a bit of water
- flaky salt
Slowly caramelize the honey and sugar with a bit of water until golden. Add baking soda and stir! It will bubble up and is very hot. Transfer to a lined baking tray to cool down (up to 2 hours). Sprinkle some salt on top.

    Hi! Great video! I made the mousse twice , but both times it got like a little bit of a split texture… actually it only looks like that, but it wasn’t really split. What do you think I could have done wrong?

      I’m happy to hear you tried out the recipe! There might be a problem with the italian meringue, it could be overwhipped or the syrup was too hot. My instructions were not very good for the italian meringue so I recommend you to check out a few better tutorials on TH-cam. Some coconut cream products can be a little bit strange and the recipe might need some adjustment (amount of cream versus whipped cream and meringue)

      Avocado in this recipe is used mostly for the nice texture and consistency, with strong flavours it is hard to tell sometimes that it is avocado, it tastes more of lime and lime works wonderfully with coconut.

    How long should I freeze and how long to defrost?

      Safest option is to freeze overnight but generally 2-4 hours is good if the freezer isn't packed. Defrosting takes around 30 minutes. You can test it with a stick. It is nice when it is still a bit frozen, too 🙂

    What makes this cooking Channel so attractive to me, is that there’s no talking and it’s nothing but sounds of nature and cooking. I am a Visual learner so I pick up more on different techniques that I see rather than listening to instructions. So I applaud your techniques and your channel ! That’s one fruit I have never tried !
