Stephanie is a simple living mom of 3 girls, a ranchers wife, and a gluten free from scratch cooking enthusiast. Question I have is how do you know if your starter is past peak? Regular wheat starter starts to collapse. Thank You...Ron
I hope you like it as much as we do! It will fall just slightly. I just always look for all the air pockets in my starter. If it has a bunch I know it is at the peak. It never rises too much but if you use a rubber band around your jar to monitor the growth you will see it does rise some and if it falls some then you have missed the window.

Hello, I’m just learning how to do the GF sour dough starter. Can I ask you a question about your water? Are you on well water? I used to be on well water but moved to a home in the city that has processed water that includes chlorine. I’ve heard chlorine inhibits the bacteria growth needed for fermentation.
Yes, I am on well water so use the water from the tap. I would like use city water. You are correct that it will inhibit the bacteria growth. I would use filtered water to feed your starter.

To clarify those alternative sugars are sugars and not an alternative to sugar. There us no way to make a healthier carmel as it is dependent on actual sugar. That's like trying to make creamer without a fat
just out of curiosity - what brand of shampoo and conditioner do y’all use
For myself I use Prose. I have tried many different natural shampoo and conditioner including the bars and they never work right on my hair. Prose has been the best, although it is pricey. These are great ideas that I wish I had known about when I first realized my gluten allergy! I can’t imagine what it’s like to be a kid with a gluten allergy. It must be so frustrating. I’ve cried as an adult whenever I haven’t eaten before I left and I show up to a potluck and there’s nothing I can have except for salad, and then I still couldn’t have the dressing sometimes. Now that I have a lactose dairy allergy, it’s even harder. A friend who claims for us during certain times of the year brought over a platter of goodies, and nothing was both gluten and lactose free, and she said well you can give it away. It is so hard. Chocolate usually contains milk, fat, so when people offer to do dairy free options, I will tell them that you can’t just use normal chocolate chips for your gluten-free chocolate chip cookies.
It is so hard with food allergies when eating at other peoples houses. I used to have such a hard time and didn't want to be a bother, but I am finding the more and more I speak up the more people are up for the challenge and WANT to cook for me! It is great! They usually ask lots of questions and I don't mind it at all.

I tried out with a rice flower and it was going really slow. So at the 8th day I decided to use chick pea flower instead of rice flour and it really kicked off. I kept the rice flour starter, just stopped out for chick pea flour.
I have never tried chickpea flour, but good grain flours like that will work!

I love this video, but i have an unrelated gf sourdough starter question. I see you have an electric glass cooktop stove, and you are using a bath canner on it on day 3. I never used the bath canner they are selling around because they are made of aluminum and doesnt work well with the glass cooktop. Which one is yours, and are you using it on the glasstop? Also, how does it work for you if you do it on glass cooktop? Also, on day 4, whats that steel kettle looking on the spot where the canner was? (Just in front of the white kettle) 😊 thanks
I'm so glad you liked the video! I did have a glass top stove in this video and I have always used a traditional water bath canner on it. It always worked just fine for me! I am kind of a rebel, I even pressure canned on my glass top stove even though they say not to! lol On day 4 that steel kettle is my coffee perculator. Feed it twice, while fully active for the first feed, add another round. Do about half or so. Let that get active and then use it. Also try caputo gluten free flour

That is a long time to be in the heat. I'm wondering if you're losing more of it's nutritional elements doing it this way, than you are when cooking it in a pan for 3-5 minutes. Anyone know?
Since the heat is low enough, it doesn't lose any more nutritional value then if you were to fry it in a pan. When you cook it in a pan, yes it is less time, but the heat is much higher. You do lose nutritional value either way you process it but according to the dietician I work with, it is not much.
@@theranchershomestead8497 160 is pretty high. I looked this up, and it say's to dehydrate at 110 if you don't want to lose too much of it's nutrients. It say's, at 160 you lose more than if you were to pan fry it. I see some other youtubers doing it at 110 as well for the same reason. And they just leave it in for longer. I guess I will have to test it. I understand your trying to be careful and follow the FDA guidelines though. I wish I had a freeze dryer!! That's why all the online supplements you can buy online, work so well. Cause they are pretty much still raw. Thank you so much for your video! I might try this.

I stumbled upon your channel last night and have binge watch many of your videos regarding GF. I have a relative that needs GF foods so trying to figure this out. I'm confused. I believe you said in many of your videos that you like psyllium husk better than guar ganthum but i have yet to see/read any of your recipes where it is used. Help me understand. Welcome! I do love psyllium husk powder the best for breads. You will notice it is used in my all purpose gluten free whole grain bread recipe. I use that base recipe for a lot of my base bread products such as fry donuts, pizza pinwheels, pizza crust, and cinnamon rolls. I like xanthan gum the best in baked products such as muffins, cakes, cookies etc. Depending on the product, depends on which binding agent I use! I hope this answered your question.

Love your video. You might look into how they raise the corn they use. I have just come to understand that if you want to avoid, pesticides and herbicides you have to buy organic. Even if something is gmo free the fields of food are quite often sprayed with herbicides and pesticides that are not glyphosate but are extremely bad for you.

I buy all my flours, apple cider vinegar, xanthan gum, baking powder, and salt on Azure Standard. I buy the honey locally. Hope this helps!

Yes you can! It will take a bit longer to rise, but you definitely can!
When was the last time you fed the starter?
I fed it the day before and it had risen and fell which was perfect to use as a discard!
When you hot pack ,how hot was your water in the pressure canner? I’ve only cold packed my all American, I have broth that I cooked yesterday and tomorrow I am canning them but I’m nervous about heat cracking jars and keeping the balance between canner water,broth temp and jar temp……
Top be honest, I do not take my temperature so I really don't know how hot the water is. I make sure to heat my jars and my broth back up so when it goes into the water is is already warm/hot. I have never had a jar crack on me from heat when I make sure my jars and broth are hot.

What gluten free flour do you like best
My favorite all purpose gluten free flour is Cup 4 Cup. I make my own homemade blend that is the most like Cup 4 Cup, I share the recipe in my digital cookbook on the blog. Cup 4 Cup and my homemade blend both have dry milk powder in it, so they are not dairy free.

Sorghum flour is a gluten free grain flour. I do not use it in the bread, it is a stronger grain to feed the starter.
