We used that same method at a restaurant I was working at. The leftover baked potatoes would get run through our big mixer grating attachment, spread out on large sheet pans, and frozen. I don't know,I did mine differently. It was a bit of work, but a lot less than this. I would peel and wash my potatoes whole keeping them in water when not handling them. Then I would shred in my food processor immediately returning them to water so there's no color change. Finally I pull them out of the water using clean dish towels I would dry them well and use my vacuum sealer system to bag them all up. No precooking needed. When I used them they cooked up just fine. I also used this for "getting rid of" potatoes that were close to going bad, and potato cubes for soups stews and casseroles. Never precooked anything. All worked out great.

Me too. Ones I dehydrate, get blanched though. No freezer needed.

Yes I do not peel them, the skins shred right off so need for the added work!
Why aren’t you putting that heel of potato skin in the compost?
