The best way to wash the leeks for dirt is to cut the leeks half way through, and THEN wash them under running water, and not cut them up, and then wash them in a wash tub. You cannot be sure that you have managed to get all the dirt out after the wash-tub-method that is presented in this video. Maybe it looks nice with whole rings of leek in the soup, but I prefer no dirt from the very beginning of the preparation of ingridients for the soup.

I live nearly directly in the middle of the US amidst corn, milo, wheat, sunflowers, and soy so getting golden syrup here is expensive. However, I did find a recipe to make my own, and I cannot wait to test it out! I thought I was stymied by shipping costs and exotic ingredients, but I was so wrong. It is time consuming, but seems to be worth the effort, like Armenian Pumpkin Preserves.

Not bad for a first attempt. Only comment I would make is that I don’t think it’s a good idea to roll them individually in your hand after you’ve layered the butter/lard. This breaks down the layering.
