In this channel I cook and share delicious recipes. I cook many Asian and Western dishes my family likes to eat however I am broadening my horizon everyday with food from different culture. I used to work at restaurants for many years cooking in the past but now I just cook for my family.
This Chinese BBQ chicken Char Siu recipe is so delicious and easy! I can eat this everyday!
Char Siu is a Chinese BBQ dish name and this chicken Char Siu is a spinoff of that same flavor. You're probably more familiar with the pork Char Siu as you can easily get this from Chinese restaurants. Japan also has their version that goes into ramen as a topping and it's called Chashu. This recipe follows the Chinese ingredients but the method will be very different. First, this uses chicken. Whole chicken leg quarters will be deboned for easy serving. Second, it will be pan fried (thanks to the deboned chicken) instead of oven baked. Of course, if you don't have the time or patience to debone chicken legs or thighs, just use this same recipe and bake it in the oven instead at 375F (1 hr for drumsticks, 50 mins for thighs) and broil it for 3 minutes at the end.
This chicken Char Siu is pretty easy to make and you will definitely enjoy this dish.
Marinade:
4 garlic cloves
1 tbsp brown sugar
1 tbsp honey
2 tbsp hoisin sauce
1 tbsp oyster sauce
3 tbsp light soy sauce
2 tbsp Shaoxing wine
1 tsp Chinese five spice
½ tsp sesame oil
4 chicken leg quarters
Cooking instructions: Marinate the chicken for 8-24 hours. Heat the frying pan in med-high heat and cook the chicken with the skin side down for 3 minutes. Flip them over and cook for 10 minutes in med-low to medium.
Bok Choy:
4-5 medium bok choy
2-3 cloves of garlic
1 tbsp vegetable oil
salt & pepper to taste

Try dry sherry, sake, or mirin as a substitute for shao xing wine.

It will come out pretty rich but if you like it that way go for it. You can chop them up too.

I wish you had the ingredient measurements to only make one container.
You can reduce the oil and pepper flakes and salt by 1/4 from what I listed in the description section. One gallon = 16 cups. 32oz mason jar = 4 cups. As for the aromatics that go into the oil, I would reduce them generally by half because for some of them like cinnamon sticks, you won't get any flavor if you reduce too much. Hope this helps!
