Travelling and working around Australia in our van and cooking up local produce in the towns we stop at. Also exploring as we go.
Hawaiian fish Ep.32
Hawaiian Fish
750g Fish fillets
1 Tablespoon curry powder
1 Tablespoon tomato sauce
2 teaspoons Soy sauce
1/4 teaspoon chilli powder
salt and pepper
220g tin pineapple pieces
1 cup pineapple juice
flour for crumbing
1 cup breadcrumbs
1/2 cup grated parmesan
1 Tablespoon dried chives
1 egg
1/2 cup milk
Oil for frying
Method
1) Strain pineapple, keeping the liquid.
2) Combine pineapple juice, curry, tomato sauce, soy sauce, salt and pepper, chilli powder in a bowl. 3) Add fish and marinate for a minimum of 1 hour. Drain and keep liquid.
4) Make up your crumbing station- 1 bowl with flour, 1 bowl with egg and milk mix, 1 bowl with breadcrumbs, parmesan and chives.
5) Coat fish in flour, eggwash then breadcrumbs.
6) Heat oil in a frypan. Shallow fry until golden and turn and fry on other side.
7) Heat marinade liquid in a saucepan, bring to a boil and thicken with cornflour (1 Tablespoon mixed with 4 Tablespoons water). Season.

Fitting a domestic fridge into our van.

Our 3 way tropical fridge was sitting on 24'c at the beginning of the year, so we ripped it out and installed a domestic fridge. It took us until now to get an electrician to finalize all the wiring so we could finish this video.

what is "ver" juice????????
It is Maggie Beer's favourite ingredient (If you've ever watched cook and the chef- she uses it in everything)! It's like a juice made from sour fruit, substitutes for it are white wine vinegar, or something acidic. Although I like to use white wine, as it's what I usually have on hand. We had karkalla verjuice from the Native Australian food co, which is why I used it.
By the time I peel the potatoes my lunch time will be over 😂

Hi It's actually a Bushman RV explorer BBQ. The plate is only about the size of an A4 piece of paper but it's big enough for the 2 of us. It came with the van when we bought it, it heats up well and cooks great. The only thing is that the lid isn't deep, like a weber or ziggy, for roasting, however we have done a few small roasts and those butterflied chickens in it.

@@aussiefoodjourneys do you guys recommend a good stainless steel cooking pan? And a roasting tray that can be used on a hot plate so I can transfer it into a oven too, thank you
I use my dine rite saucepans- as they go on the stove and into the oven. Otherwise I use a bain marie dish (can be purchased from GD products) that I use on the hotplate or BBQ plate, then transfer to the oven. Because of our weights in the van I don't carry much- so what I do have is multi purpose cooking equipment. Having said that even at home I used to use the trusty bain marie dish instead of a traditional roasting pan.
Still better than being “that prick” that breaks down in the middle of the Captain Cook bridge during rush hour 😂

There are exercises that you can do, when you sit for long periods of time, to help circulation.

yes, without the seafood it's a basic creamy garlic sauce. I just like to add the cream a little bit at a time, let it reduce and then add more, that way it doesn't take as long to reduce and doesn't burn on the bottom.
I usually add mushrooms and it goes good with just about anything

I agree and you can appreciate it more seeing it first hand rather then looking at items in a museum. You get a much better feel for how they lived way back then when you can see it. It wouldn't have been easy, we have so many luxuries today that we don't realize are luxuries- like running water and electricity! Thanks for watching.

Green Ant Lemon Marmalade chicken wings with Texas slaw Ingredients 800g chicken wings For the marinade 1 Tablespoon green ant marmalade 2 Tablespoons Karkalla verjuice 3 cloves garlic ½ teaspoon ground ginger 1 Tablespoon soy sauce Salt and pepper Glaze 1/3 cup green ant marmalade 1 Tablespoon karkalla verjuice Method 1. Finely chop garlic 2. Combine all marinade ingredients. 3. Cut chicken wings into pieces and combine with marinade. Marinate for at least 30 mins or overnight. 4. Preheat oven to 190’c. 5. Lay chicken wings in single layer into a baking tray. 6. Cook for 20 minutes. 7. Combine glaze ingredients. 8. Remove wings from oven and brush with half the glaze. Cook for 10 minutes. 9. Turn wings and brush with remaining glaze. Cook for a further 10 minutes. ENJOY!! Texas Slaw Ingredients ¼ savoy cabbage ½ red onion ½ carrot ½ green apple Dressing Juice of 1 lime ½ cup sour cream ½ cup mayonnaise ½ teaspoon cumin Salt and pepper Method 1. Finely shred cabbage, and transfer to a mixing bowl. 2. Peel and grate carrot and apple. Add to cabbage. 3. Peel and finely dice onion. Add to cabbage and mix. 4. In a separate bowl combine sour cream, cumin, salt, pepper and mayonnaise. Add lime juice to taste. 5. Pour dressing over cabbage mix and stir to combine.
