➤ INGREDIENTS: (9 servings, 8×5.5 inch pan, 30 minutes)
FOR AVOCADO BROWNIES
1 medium avocado
¼ cup coconut oil (60ml)
1¼ cups flour (170 gram)
40-gram cocoa powder, unsweetened
⅓ cup honey or maple syrup (80ml), the honey can be reduced to ¼ cup if you want a lower sugar variation
½ teaspoon baking powder
⅛ teaspoon salt
1 cup coconut milk (250ml)
FOR TOPPINGS
100-gram vegan cream cheese
2 tablespoons coconut milk or any non-dairy milk, might add 1 or 2 tbsp more if needed
2 tablespoons icing sugar, optional
18 googly eyes
➤ INSTRUCTIONS to make Cream Cheese Frosting
- Mix well cream cheese and milk until smooth. If your frosting is too thick, don't worry… you can add 1 or 2 tbsp of milk more to make it smoother and easy to put in the piping bags.
- Note: You can add 2 to 3 tbsp of icing sugar in this cream cheese frosting to bring up the flavor of your topping. Personally, I don’t want my little daughter to eat too much sweet from sugar so I did not add it.
- Transfer the cream cheese frosting to a piping bag, close it, and cut off the corner (you can also use a small plastic baggie)
- Drizzle the cream cheese frosting across the brownie, back and forth. Then place two Googly Eyes toward the top of each brownie.
- Serve and enjoy!
➤ ZOE’S NOTES
1. Baking tips: Do not open the oven when the cake is baking. Make sure you let the brownie cool in the pan before cutting and adding the toppings. The brownie can be a little fragile when still warm.
2. Want a lower sugar variation? you can reduce the honey (or maple syrup) to 1/4 cup (60ml). My daughter happily ate the brownie at this sugar level.
3. Avocado tips: Make sure you use a ripe avocado for this recipe. If the avocado yields to firm gentle pressure you know it’s ripe and ready to eat.
4. Don’t like Cream Cheese Frosting? You can use white candy melts, white chocolate chips instead to make the mummy bandages. All are delicious!
5. For this recipe, we used an 8×5.5 inch pan to make 9 Mummy Brownies. If you want more mummies, you can double the batch or use a mix/recipe that yields more.
6. Want the circle mummies? You can also bake your brownies in a cupcake pan so you have a lovely circle sharp of the mummy brownies. Kids will love it!
7. Store tips: Store brownies in an airtight container at room temperature for approximately 5 days.

      The frother is used to make foamy coffee. You can skip it if you want. You can use coconut cream instead of coconut milk. However, the texture of your drink will be thicker than when you use coconut milk. It is up to you and your taste. Thanks for your subscription 🤗

    This turned out so lovely! If you make it regularly, may I suggest pouring in the orange juice first and then adding the ice? I think you might get a little bit stronger blue color with the butterfly pea flower, possibly. Also, I had a question about the sweetener you used. It said equal and the equal that I'm aware of is not a natural sweetener. Which sweetener did you use?

      Fresh mango is a good option. You can also replace strawberry with grapes, kiwi, blueberry, peach or plum. It depends on the fruit you choose and you flavor, you can add a little more or less lemon juice to make your drinks tastier. I hope it help. Thanks so much for watching my video 🙂🙂🙂

      Agree for that small amount of coffee grounds 3-4 tsp! Frother was really needed to mix coz that's a lot of sugar crystals to dissolve 😮 A shame there was too much coco milk so not all coffee made it in the final cup.

      1/2 tsp bột nở hay muối nở là khoảng 2.84 gram đó bạn. Nhưng để đong nguyên liệu chính xác nhất cho bánh, bạn nên sắm 1 bộ muỗng đong làm bánh nha. 3 tbsp kem whip là khoảng 45 ml đó bạn. Bánh này mình làm bằng bột mì đa dụng tức là bột mì số 8, bạn đừng dùng bột số 11 nha. Bột 11 là dùng làm bánh mì. Nếu bạn muốn bánh mềm xốp hơn thì cùng cake flour.

      Bánh nào dùng lò nướng thì cũng phải bật lò trước 10p để lò nóng lên và đạt nhiệt độ ổn định thì mới nướng bánh ngon, ko bị xẹp.

      Nếu không có máy đánh trứng, bạn cũng đừng dùng bơ chảy nhé. Bánh này chỉ dùng bơ mềm thôi. Bạn để bơ ở nhiệt độ phòng đến khi bơ mềm thì cùng cây đánh trứng đánh đều với đường cho đến khi bông mịn. Đánh bằng tay nên sẽ lâu hơn đánh máy 1 chút thôi. Bạn hoàn toàn có thể đánh bằng tay, chất lượng bánh vẫn rất ok nhé.
