So here’s a recipe for Pumpkin Spice Marshmallows with Orange Zest: 🍁In the mixer: 🔸130g pumpkin purée 🔸7g albumin 🔸100g sugar 🍁For the syrup: 🔸150g water 🔸200g sugar 🔸7g agar-agar Plus: 🍊Zest of 1 orange 🫚Cinnamon, ginger Whip the pumpkin purée with sugar and albumin until very fluffy and airy. In a saucepan, combine water, agar-agar, sugar, and spices( I take teaspoon of each) Place the mixture on high heat and stir. Once it starts boiling, cook the syrup until it reaches 110°C (230°F) Stir the syrup constantly, and once it boils, reduce it until it reaches 110°C (230°F) or forms a fine thread. Slowly pour the syrup into the egg whites while beating at high speed. Add orange zest and mix quickly, but don’t over-whip, as this can cause the marshmallow to deflate. After mixing, pipe the marshmallow halves onto parchment. Let them set for about a day, then dust with powdered sugar, sandwich them together, and enjoy! 🥰 Store in an airtight container for up to 10 days for a wonderfully spiced fall treat!
