Easy Garlic Naan + Wedding Chicken | How-To Recipe | Nusrat Symons
GARLIC NAAN & WEDDING CHICKEN

**RECIPE: (Yields 10 - 12 Individual Naan)
INGREDIENTS
**NAAN BREAD
2 Packets Instant Yeast
2 Cups Luke-Warm Water
2 TBSP Sugar
6 Cups Bread Flour
2 ½ TSP Salt
3 TBSP Olive Oil
⅓ Cup Full Fat Yogurt
½ Cup Milk
GARLIC BUTTER
½ Stick of Butter
2 Cloves of Garlic
¼ Cup Fresh Cilantro
**WEDDING CHICKEN (Serves 4-6 ppl)
2lbs of Chicken Thighs
6-8 Cloves of Garlic
2 TBSP Fresh Minced Ginger
1 ½ TSP Salt
1 TSP Cayan or Pasmedi Red Chili
1 TSP Cumin powder
1 TSP Ghram Masala
1 TSP Turmeric
1 TSP Paprika
2 TBSP Simply Chicken Spice
½ Red Bell Pepper
3 Tomatoes
1 Cup Diced Red Onion
6oz Tomato Paste
**INSTRUCTIONS
NAAN BREAD
Bloom the yeast Mix 2 packets of instant yeast and sugar into lukewarm water. Allow the mixture to rest for 3-5 minutes, then whisk all the wet ingredients together.
Mix Dough: Combine the salt and 5 1/2 cups of bread flour together, then add in the liquid mixture. Hand mix it into dough for 5 minutes, until the flour is fully incorporated. Let the dough rest for 5 minutes.
Slap & Folds: Transfer the dough onto a baker's bench and continue kneading with the “slap and fold” technique for 3-5 minutes until the dough is completely smooth and cohesive.
Rest Dough: Once the dough is smooth, allow it to rest for 30 to 40 minutes, until it has doubled in size.
Divide Dough: Next, divide the dough into 10 -12 equal parts, shaping the dough into balls. Lightly dust the dough with more bread flour to prevent sticking. Allow the dough balls to rest for 15 minutes, then transfer them onto a baking mat.
Flatten Dough: To shape the naan dough, dimple it with the tips of your fingers, as you would with focaccia bread. Allow gravity to help you stretch out the edges of the dough so it appears as a disk, it should resemble a small dinner plate. Continue using extra flour to prevent the dough from sticking.
Bake: Space the naan dough disks 2 inches apart from each other before baking. Bake at 425°F/220°C for 5 -7 minutes.
Topping: To prepare the garlic butter for the naan, melt half a stick of butter with 2 cloves of minced garlic in a small pan over medium heat. Simmer the butter until it foams lightly around the edges. Once melted, remove the butter from heat and sprinkle in the fresh cilantro. Once the naan is baked, drizzle the garlic butter over top of it.
WEDDING CHICKEN
Prepare Chicken: Rinse 2 lbs of chicken thighs and pat them dry.
Prepare Vegetables: Peel and mince 6 cloves of garlic and 2 TBSP of ginger, press them into a paste with the side of your knife blade. Dice red onion, red bell pepper, and tomatoes.
Cook Chicken: Coat a large skillet with 3 TBSP of olive oil and sauté the red onions for 5-6 minutes until they turn light brown. Add the ginger and garlic, and sauté for 2 minutes before adding the chicken thighs, spices, tomato paste, and tomatoes. Mix everything well and cover the pan with a lid. Once covered, allow the chicken to simmer. Check the dish periodically and stir to prevent the chicken from scorching on the bottom of the pan. Simmer on low heat for 30 minutes.
Garnish: Top with a squeeze of lemon juice.
Total process: 60 minutes

    Nice. Thank you for publishing this video. I've baked bread sporadically over 65 years. Watching fist as my mother made her Cornell University recipe loaf bread and later as I stumbled into my 20s and 30s. Now that I'm retired I'm practicing more with scones, baguettes and croissants. I've become passionate about baguettes, but have yet to crack the code; the flavor is great, but the crust is still too thick. Your detailed comments have helped and I'm anxious to fire up another round of baking.

      Great question Tina! We asked Jessie for you. You technically can, but you'll need to add it with the wet ingredients. It will change the final texture and flavor. The scone dough will be more wet, so it's up to you.

    How much water do you add to the hopper and how do you pre season the stones?

      The reservoir holds about 1 3/4 cups of water. When you get your oven you will have to cure the stones. You will be given instructions upon delivery.

    The recipe calls for 4 folds and then wait 2 to 3 hours until the dough doubles in size, then to the fridge. She does 3 folds and after the last one straight to the fridge. Can you please clarify? Thank you. 🙏🏻 great video.

      You can score however you like! Proper scoring results in a better texture and appearance. Apply a firm and quick motion to make the cuts. 😄

      Hi-Karen here from Wildflour Artisan Sourdough. You can score in 10 minutes but you will lose a lot of steam in the process. You can always steam again perhaps. I would recommend scoring before loading and see how it goes. Hope that helps.

      It was 73% hydration! Therefore, 1575g of flour would be 1575g x .73 = 1149.75g water. Hope this helps!

      We waited approximately 20 minutes. I usually start unloading my next batch onto the loading boards when the oven reads 450 degrees. Remember the temp we are seeing is the temperature in the air of the oven. After your first bake the stones remain hot. The stones are doing a lot of the baking. It’s the transfer of heat. The turn around load time is pretty quick.

    I've been making pan de sal at home. The ingredients that I used are all purpose flour, sugar, salt, baking powder, yeast, water, and breadcrumbs. It's a very basic white bread recipe.

      @@ampol745 sponge: 1 c water, 2 tbsp sugar, 2 tsp yeast 3 tbsp veg oil, 3 cups all purpose flour, 1 tsp baking powder (if you want your pandesal with a little bit of sweetness add 3 tbsp sugar. I use this recipe for my siopao also.

    I was looking forward to this recipe because it looked so delicious. But the recipe is not clear. You don't specify how much flour for each step. The directions and recipe are not clear. Could you please post how much of the ingredient per step. Flour for Topping, flour for cake and the other ingredients as well.
