This video... answered so many questions for me. Like, "what did people do before blenders?" and "why when I make saag does it bubble all over my kitchen like lava?" I adjusted the method to work in a Western kitchen. Cooked in a claypot. Used a spatula to smush for a bit (first hour or so), then near the end swapped for a rolling pin. Holy shit, SO MUCH BETTER than the blender method. You actually taste the vegetables this way. Because I don't have the traditional set-up it's not as smooth as I remember eating in India... but man, a touch chunky is a fair trade for *this* much better of a flavor. Thanks for sharing the traditional method. So much more informative, even if I have to hack together a couple things on my end :)

You first try to learn Hindi . you actually don't know Hindi you south Indians are just giving importance to English and not trying to learn Hindi . If you know Hindi then you will not have to suffer any problem in India because most of the languages are from hindi

Every step is perfect. Congrats to Sardarji for sharing his culinary expertise. There is one big problem however, in Panjab villeges aluminium kadahi is not used. Instead earthen kadahi is used having a little thicker bottom. Advantages: 1. Sondhi sondhi Mitti's fragrance. 2. Avoiding 28 types of chronic diseases in the long run as chemicals produced while cooking in Aluminium utensils are really injurious to our health. Even poor people used to cook in earthen utensils. Good luck and bon appetite for enjoying Sarson ka Saag and Makki ki roti.
