The first time saw japanese restaurant has a dirty cutting boards.... As i usually watch Japanese chef always has a clean boards... Is this one is exception ??
If saucing something like Maguro/Tuna nigiri, you should either use a bottle to carefully apply droplets of sauce onto the fish, or apply with a brush or sauce the fish before adding to the rice. If you simply pour sauce onto the fish like it is being done in the video, the sauce will get onto the rice underneath and can cause it to fall apart when picked up. Not a "master" from what I see. More knowledgeable and skilled than many, but not a master.

Not everyone is a sushi master. There is a mutli-year apprenticeship before you get awarded that title by an official governing body.
