Yeah I slow them down and speed them up to match the music when it doesn't match properly, though I take extra care not to alter them too much so it's not disorienting. I sometimes add in sfx to keep the audio clean or when the in-game sounds are too quiet.
Time, patience and practice. My advice is to just start editing things, do simple stuff initially so you don't get scope creep. Then just find a style and lean into it. As DOOM Eternal's game director Hugo Martin put it - "You're a thousand shitty paintings away from being a good painter so hurry up and start making shitty paintings". I've been editing things for about two years now and my earlier stuff was pretty whack. Best thing to do is to not give up. Just start small and simple and eventually you'll get the hang of it.
