  • We spent a lot of time testing these bars and found our favourite recipe. This vegan milky bar is almost like an ice cream version, served best chilled and so delicious! Let us know if you try to make them and what you think of them. 👍😄
    Sorry we don't have a written recipe for this! We're currently working on an updated and improved version which will feature in our new book (to be launched in Spring 2018)... So please bear with us until then!

    Looks amazing! I love Milky Way bars. If you were trying to keep it lower in fat, I wonder if you could use aqua faba instead of the oil, whipped into peaks and then folded into a heated/cooled soya milk/vanilla/maple syrup/tapioca flour base, and then frozen? Just thinking it might create a nice mousse-like texture inside (or it might not work at all... :-) )

      Rose Viola That's a very good idea. Maybe the problem is when the af starts to melt when dipping them in chocolate. And I am not sure if you can heat the whipped af without it melting. I was thinking since the tapioca starch need to be activated over heat to thicken.

      That's why I was thinking the soya milk/vanilla/maple syrup/tapioca mixture should be heated first and then cooled before the aqua faba was folded into it. Not sure if it would work, though. The soya/tapioca mixture might be too thick at that point to fold successfully into the aqua faba. Maybe agar agar would be a better thickener if using aqua faba...? The heated chocolate might affect the aqua faba but I'm not sure. I saw a recipe for a delicious chocolate mousse that used melted chocolate folded into stiff-peaked aqua faba, then chilled. It seemed to work. Then again, pouring hot chocolate onto the frozen bars might be a different story...

      Rose Viola I like your idea. I have also seen people successfully made chocolate mousse with af. I think the mousse holds because of the fat in the chocolate. I think if the milky part of this recipe doesn't contain a fat part the af is more likely to melt after being frozen. But I am just guessing here. :)

      Rose Viola maybe if you made the "milky" part with af and made it to a marshmallow kind of thing, with as you mentioned agar agar, then it might work more low fat.

      That's very interesting! I didn't know the mousse held because of the cocoa butter. Would the fat in soya milk be enough, I wonder? Perhaps not...

      Hey dude! We just used cheap sunflower for the bland taste, but you can use another cheap oil if you like the taste!

    Is it possible to do this with almond milk? Or any other kind of milk? I'm allergic to soy :/

      As they said, it's there for the lecithin. If you wanted to replace that, and keep it vegan, pure soy lecithin would *probably* be fine (ask your doctor), as it's the soy proteins that cause the allergy and lecithin is not a protein.
      There are other sources of vegan lecithin, apparently "rapeseed, cottonseed, and sunflower" - wikipedia, but I imagine they might be hard to find.

      Mo chen sunflower lecithin may work. You can find in at Amazon, whole foods, or your local health food store.

    Do they need to stay in the fridge after making them? Will they melt if left outside at room temperature?

      Yunis Rajab I think they should be fine at room temperature because the coating is just the chocolate which is solid at room temperature but don't take my word for it!

      Yes, they melt. If you don't coat them quickly enough from all sides, all you have is a mess of soy milk mixture and chocolate. And they don't taste like Milky Way Bars at all. O_o

      Using coconut oil instead of sunflower oil may help. Coconut oil becomes solid when it cools. It may add a hint of coconut flavour but it would stay solid at room temperature (if you live in the uk that is).

      There's powdered sunflower lecithin, that should be okay right? It's not cheap but it could come in handy in several recipes! :)

    if you happen to live by an Asian grocery store, chances are they will sell tapioca starch or flour. its a major component in several southeast Asian recipes

      It’s better if you keep them in the fridge. Depending on how warm they’ll be if they’re out of the fridge. 😀

    I really enjoyed every single recipe presented on this channel so far, but this one is not for me to be honest. All those lovely expensive ingredients just ended up making me feel sick for the entire following day. Might be because of the massive amount of fat that's required for a proper emulsion. Thumbs up anyway for the creative idea!

    you guys avoid refined sugar but every ingredient is refined? soy milk,maple syrup etc all refined.nothing wrong with refined sugar! CTFU!!

      vamarelo1 you're saying soy milk and maple syrup is as bad as refined sugar? They use minimally processed ingredients. Processed and refined are different.

      Cane sugar is so refined it's just madness. Soy milk is basically just bean juice and maple syrup is boiled down tree sap which, like honey and agave nectar, don't raise the GI like refined cane sugar or HFCS.
