Sure would be awesome to have a model where this is less parts. I could see this being way less parts and still being super print friendly

There are so many parts in the ship because we want everyone to be able to print them easily. A special division into parts means that you do not need to use any supports for printing. Plus, it's easy to choose a color scheme, even if you have a single-head printer. Some elements are specially printed in a different orientation so that they are more durable and do not break during play.
But it's true that the model has a lot of parts - that's part of the fun too. We tested our models in workshops with children. The kids really enjoyed building. :)

I ended up using #4 screws though they were too big for the wheelhouse smaller pieces. Couldn’t find anything smaller at the local big box. used plastic glue and PLA rods for quite a few places. Also ended up plastic glueing the rear to make it water tight. Wondering if others were able to accomplish without glue.

Unfortunately, the stern has to be glued (parts A and B - we wanted all elements to be printable without supports, therefore the stern is divided into two elements). The other parts do not need to be glued.
Bolts and screws are metric, best to buy online, but we are glad that you managed to solve the problem :)
In case of problems, write to our e-mail (it is provided on the website), we will be happy to help.

The screw sizes are a bit conventional. Do you have a source/BoM for them?

      You need 4 sets M2.5x6 screw+nut (DIN 912/ISO 4762) and 28 pieces M2.2x6.5 (DIN7981/ISO 7049).
All screws are metric, but you can use similar inch screws.
