    I made this tonight on our grill and it was fantastic. This is the first Christmas in my life that I'm not making our traditional Christmas dinner. It was just the two of us so I thought I'd treat us to lamb. This turned out absolutely perfect! Thank you. Would love more of your great how-to's for other great recipes cooked on the grill.

    What a great recipe!! I definitely added this one to the catalogue.
    I made this two days ago as written, and it turned out fantastic!!
    But, beware. Those of you who do not like strong, salty flavors, this marinade may not be for you. Reducing the marinade only intensified that salty flavor. So, you might want to omit adding Kosher salt and just go with the soy sauce and Korean chili paste, which is salty in its own right, for your salt flavor. The soy sauce has a high enough salt content in its own right to do the work of a brine.
    Lastly, a rack of lamb on a grill with the lid closed at 350'f will reach rare in 10 minutes, give or take. After it rests, it will rise to medium rare. So, keep that in mind when grilling.

    I love rack of lamb but I have never thought of marinading a rack of lamb beyond traditional seasonings or serving it with home made mint sauce but this recipe sounds amazing and I will definitely try this when we have a special occasion to celebrate and have family members to dinner.

      CM lol... I was thinking the exact same thing. He could've thrown a dash of cayenne into the marinade with ease and none of us would've questioned it. That's sort of the Chef John Watermark. It's how you know it's his recipe.

    I made this recipe this weekend. It was wonderful. Rich Flavor but not spicy. The only change I made it is that I didn’t use a rack of lamb a; I used lamb ribs. Thanks for a delicious recipe.

    i just made a rack of lamb for dinner tonight before i saw this. yum. the best tip i can pass along is instead of cutting a bit between the rib bones, i find the little slot between the spine bones before cooking so that slicing between the spine bones (vertebrae) is easier while ribs are hot/warm after resting from roasting. works good for me.

    This was my first time ever preparing lamb. It turned out PERFECT! WOW! What an awesome recipe!! The only downside is that racks of lamb are expensive and kind of hard to find where I live. I've made it once with lamb, and now twice with pork tenderloin. The pork tenderloin turns out just as perfect as the lamb does! So if you see any tenderloins on sale, pick one up and try this recipe on it.
    I also highly recommend saving the remaining marinade after you pull the meat out. Put it in a small pot and simmer while the meat is on the grill. It makes an amazing sauce.

    I make Korean bbq about twice a month. Never had anything like this. Dated a Korean girl who’s parents had a restaurant. She came home with tubs of marinated meats and food every week. Best bonus for a gf ever. I still make a dish they created that’s typical Korean mix of sesame oil, brown sugar, chili oil, soy sauce etc. a filet of salmon in a sauce pan. Add a bunch of green beans, mushrooms and green onions and cook for about 30 min all together (green onions at the end) and it’s amazing. Throw over white rice ... mmmm

    I did a rack of lamb and a leg of lamb on my Big Green Egg and smoked them over Peach wood trimmings with a small chunk of cherry.... out of this world...! The Cherry darkened it up and the peach was just heavenly.

    Once one has lamb made by me on a grill or smoker they tend to change their mind on lamb lol..
    I have to try this.. I always to maple bourbon.
    Or with chops balsamic and herbs..

    I love the sauce, it’s scrumptious. I used it on some chicken thighs and served them with a Korean salad and some plain rice. I’ll have to try it on lamb when I purchase a BBQ grill. Two thumbs up!!

    This is a bit different than most of the “char siu” recipes that I’ve seen in the past, perhaps it’s because those other recipes were Chinese American recipes and this one may be a bit more authentic.
    At any rate,

    What I like the most about chef John except his cooking is when he says "it's your recipe so put what you want in it" In a world where most of the cooks are just so dumb that you wouldn't even believe I perceive it as sort of a courage. Chef John is a cooking rockstar :)

    Korean BBQ sauce is one of the gifts of the gods. I typically also add some grated ginger (for that extra Asian flavor) and as most Korean's do, a tad of Ketchup to balance the flavors with the acid (vinegar). I will be making this dish for sure! Contacting my local farm to order two identical rib racks, today. I can't wait. Also, just mix the cabbage/carrots with some rice vinegar for a more edible salad. And sprinkle with tuxedo sesame seeds. Just ideas for all ... Your recipe is perfect.

    We Korean don't have much chances to eat lamb (expensive!) so we ended up not liking lamb like Chinese,but looks delicious. This sauce is perfect with pork too.

    I'm from Australia, so lamb on the barbie is definitely a thing! Even though it's mid-winter here, I might have to try this marinade on some slow cooked lamb shanks in the next few days - practice for next summer :-D

    What about a "quick" kim chee as opposed to just cabbage? The sourness may play well against the brown sugar in the marinade. Chef John, do more pickling please. This looks so good, thanks!
