Ingredients
Chicken breast - 800 grams
Peppers - 2 pcs
Eggplant - 1 pc
Onion - 1 pc
Tomato puree - 200 grams
Bacon - 200 grams
Cheese
Breadcrumbs for rolling
Eggs - 2 pcs
Black pepper
Chives
Olive oil
Oregano
Salt
Method of preparation
Cut the onion, fry it for 2 minutes on a moderate heat. We add salt.
Cut the peppers and fry them for 3 minutes on a moderate heat.
Cut the eggplant and cook for 5 minutes on a low heat.
Add the tomato puree, black pepper and oregano. Cook for 2 minutes on low heat.
Place half of the resulting sauce in a baking tray.
Fry the smoked bacon for 2 minutes on a high heat on each side.
We make slits in the middle of the chicken breast, fill them with cheese and smoked bacon. Then we roll the chicken breast in breadcrumbs, egg and breadcrumbs again. Fry them for 2 minutes on a moderate heat on each side.
Place the stuffed chicken breasts in the pan with the sauce and pour the remaining sauce. Add grated cheese.
Bake in a preheated oven at 200°C for 35 minutes.
Sprinkle with chives.
