No answer from chèf,probably he doesnt know English. Saya pakai maezena tapi sebaiknya terong yg sudah dilubangi di kukus sebentar, karena biarpun sudah digoreng lama tapi masih keras juga. Lain X saya coba ditabur garam biar lemas,diam kan 15 menit, lalu bilas dg air dingin baru digoreng. Good luck

你們那邊沒有絞肉嗎？！
茄囊直接說要剁碎不就得了！
這刀工剁得大大小小的又有條又有塊，真是服了你了！
教你一招先把切好的茄子泡水就不會變色，要煎的話多放點油，不然就先用已經預熱的蒸籠把表面蒸熟再下鍋油煎，最後用蒸籠裡茄子的容器滴下來的肉汁勾個芡汁淋在茄子上，灑點九層塔末或蔥末好吃又好看！
我以前工作過的餐廳打火的師傅都比你做得更仔細，我也只跟著學了一星半點都覺得你的功夫真的需要再加強！！！
中式料理百百款，但實在不用捨近求遠！
還有啊...調料也太重口味了！我真不懂為什麼多數中國人老愛重油重鹹？愛吃辣也就算了，你們的腎真的受得了長期的過度攝取嗎？
我實在是很納悶、過去油鹽難取的時代加上要強度勞作一個菜配三碗米湯的時代不是已經過去了？幹嘛還要維持這種不健康的飲食呢？？？
