Hi Sherry! Sorry for the delayed reply! YES!!! Reverse sear is GREAT for a filet mignon! Instead of gogronzola or blue cheese, stir in cubed Fontina, Swiss, Gruyere, or Gouda! ALL will be wonderful! Let us know if you make the recipe and what you (and your hubby) thinks of it!! xoxo
