I was sitting here watching this video and I said to my husband, "do think something is trying to get the chickens and rooster over there", because the rooster was cockadoodle doodling away. Come to find out, it was your roosters I was hearing. 😂

Don't know how far you like to travel when you go to Brisbane for the groceries but just letting you know I have seen the packs of Ghee at the Coomera Costco the last two times I have been :-)

Where I live (Georgia, USA) there are many barbeque restaurants. I judge them on how good their "burnt ends" are. Your pork belly reminded me of burnt ends! You are an amazing chef! All of these meals looked absolutely delicious!!!!!! And, who needs perfectly round any type of bread! You actually made a heart shaped one! I'll take a heart over a round any day!
they were very good, a long cook time, 8-10 hours in the smoker, but it does its thing without too much interference so that's ok. We used some of the leftovers with some creamy ramen last night which was tasty too!
Great meals. This may be rebel canning but I don't soak my beans before canning. You might check out some videos on this and decide if you would want to do that. Saves alot of time. 😊😊
I had a look at all the different ways, I should do a test run, see how I like them without soaking, I think the biggest part is assessing quantities per jar, I don't think I have any forjars/ball mason lids left so I will have to use some of my fowlers jars and they're such a different shape to the quart/pint jars that I don't know that I can use the quantities the same way!
Those bagels look amazing. Glad Daryll likes the pepper jelly. I'm loving that square cast iron. I've been working on getting used to using my gas grill for more than grilling meat just in case that becomes my only option.
Its really nice to have the different shapes, that square one is a pyrolux brand, it wasn't overly expensive either and I've never had any issues. It works just as well as some of the more expensive ones I have!

I did a very basic recipe for these ones! Makes 24 Rolls Without the starter would be 1.1kg Bread Flour 600g Water 14g salt 20g sugar 120g Olive Oil 14g instant yeast Egg for egg washing and optional seeds I throw everything into my kitchenaid and mix until it is all nice and silky and climbing the dough hook. I don't worry about order or adding anything in later or blooming my yeast lol, I'm very much a throw it all in gal. The rolls end up about 80-90g each but I tend to weigh the dough and divide it each time just to make sure.
I went to Costco this week down here. There was hardly anyone there. I think the atrocious weather deterred people. My next visit will in in 8 weeks - before Xmas. They had Ghee twin jars on sale and also chicken breasts on sale. I can’t recall how much. I didn’t buy due to having stock and freezer is full.
I saw the email come through with the Ghee on sale, gonna grab a couple of those, I've got 3 shops before Xmas still, mid october, mid november and mid december, gonna go 4 weekly for those last two I think, I don't know that I could stretch 8 and 6 will be just a little too far from xmas for some of the xmas treats... lol, but the last trip will be during school holiday's, dreading it!

@OurSmallFootprint It is so tender, and the sear really adds flavor, and the broth is also flavor for rice/pasta/potatoes/ or gravy starter. ●●●● The best is a marbled cut of meat, so that the little fat veins just melt, leaving meat 'strings'. I trim off any sheet/layer of fat, cut into fist size chunk that will fit in your jar. I prefer dry seasonings because of the salt/sugar/Chem adds in marinades. I like at least 1" of broth going in 1st, fewer air pockets. Fill jar, process. ¤¤ I did Easter dinner, lamb roast, in 35 minutes. Veges, fancy couscous, and our guest made mac&cheese in his instapot. It was fab.

I think the lard based ones really help, I have used other butter alternatives and never got quite the same soft and flat texture, but the lard really just makes it work for me!

Anyone that can make spring roll wrappers has far to much time on their hands IMO 😅. Your noodle dish with the eggs, mayo and vegetta seems an interesting cross betwen a carbonara and an asian noodle with the added the chicken an cabbage mix. Thanks for sharing 👍
It is still sitting covered up at the moment! There are a couple of parts missing that I'm having trouble sourcing and we need flue as well and we need to set up a covered space to set it up, so its one of those things that keep being put off :S. FX we can get it all sorted though, its just a bit of a bigger challenge than I originally anticipated!

It is a bit like that, its got the texture and creaminess of a carbonara but with that hint of asian flavour.

Oh I am so sorry but I’ve a super stupid question - how do I make sour dough starter?? I see you use it so often and would love to do it too!
I have a video on it, but to be honest I don't know how well easy it is to follow lol! Editing across many days is definitely a challenge for me!
